Slow Cooker Ground Beef Stroganoff

Weeknight dinner doesn’t get any better than this mouthwatering, easy beef stroganoff recipe. It’s so creamy and comforting, just like traditional stroganoff, but with this version it cooks low and slow in the crockpot, giving all of the different flavors time to develop and become super flavorful. The silky, rich mushroom and sour cream sauce is simple yet so incredibly delicious with the ground beef that you’ll want to keep this on regular meal rotation.

Another great thing about this recipe is that it’s made with ground beef, instead of more expensive cuts of beef. So, it’s a budget-friendly recipe that makes enough to feed the entire family. It’s a delicious meal served over egg noodles but it’s equally as yummy over rice, spooned over a baked potato or all by itself with a simple chunk of toasted garlic bread.

  • Ground beef
  • Cream of mushroom soup
  • Onion soup mix
  • Beef broth
  • Worcestershire sauce
  • Crushed garlic cloves
  • Sour cream
  • Egg noodles

🥄 Instructions

Step One: Brown the Ground Beef

  • Brown ground beef in a large skillet and drain. Spray your crock pot with non-stick spray.

Step Two: Add Ingredients to Crockpot and Cook

  • In your crock pot, combine browned ground beef, the can of cream of mushroom soup, onion soup mix, beef broth, little bit of Worcestershire sauce, and garlic.
  • Cook on low for 4 hours.

  • 30 minutes before cooking has finished, add sour cream and stir to combine. Then, prepare your egg noodles according to package directions.

Slow Cooker Beef Stroganoff Recipe Variations

  • Sour cream – instead of sour cream you can use Greek yogurt, mascarpone cheese, cream cheese or crème fraîche. Keep in mind, the thickness and flavors depend on what type of dairy you use.
  • Ground beef- we used lean ground beef, but you can use other lean ground meats like ground turkey or ground chicken.
  • Other veggies– feel free to add other veggies to the sauce. Sauteed onions, carrots and green peas are a great option. If you’re a big fan of mushrooms, you can also add additional fresh mushrooms. White button mushrooms, cremini, or portobello all work great. You can use canned mushrooms if that’s what you have on hand.
  • Egg noodles – The classic beef stroganoff is served over egg noodles, but you can use any shape pasta you prefer. Linguine, ziti, even spaghetti noodles will work great.

How to Store Leftover Stroganoff

Fridge: Store leftover beef stroganoff in an airtight container 3-4 days, reheat in the microwave or on the stove on medium heat.

Freezer: The stroganoff sauce doesn’t freeze really well once the sour cream has been added. If you’re looking for make ahead freezer meals, you can make the recipe the same way, but wait to add the sour cream. Just add the beef mixture to freezer bags and freeze for up to a couple of months.

After you’ve thawed it and reheated it, add the sour cream and stir well.

Tips for the Best Beef Stroganoff Recipe

  • There’s a good bit of fat in the sour cream so you’ll want to use a lean ground beef. I recommend a 90/10 blend.
  • As written, this recipe makes about 5 servings. If you have a 10qt slow cooker you can easily double this recipe to feed a crowd.
  • In order to prevent your egg noodles from getting too soft, store them separately from the beef and sauce mixture. That way you only have to heat them slightly before serving leftovers.
  • When storing leftover egg noodles, toss them with a few drops of olive oil. This will prevent them from clumping and sticking together.
  • If the sauce is too thick, add a little more beef broth to it. This will give it flavor without diluting the flavor like water does.
  • The sauce for this recipe if perfectly thick, but if you want an extra thick, gravy like sauce, you can use cream cheese instead of the sour cream. You can also add a cornstarch slurry. As a rule of thumb, dissolve 1 tablespoon cornstarch in 1/2 cup water to thicken the sauce. Add the slurry to your sauce as it simmers in the slow cooker.

What Goes with Beef Stroganoff?

This is a hearty and filling enough dish that you don’t necessarily have to serve it with a side dish. To add extra green veggies to your diet you can serve it with a simple side salad, this Creamy Green Pea Salad, Glazed Carrots, homemade Coleslaw, or this easy Broccoli Salad.

What is the Best Cut of Meat for Beef Stroganoff?

If you’re looking for other cuts of meat to use, instead of the ground beef, you can use cubes of chuck roast, sirloin steak or precut stew meat from the grocery store. You will need to adjust the cooking time to allow time for the denser pieces to cook until tender.

Can You Put Raw Ground Beef in a Slow Cooker?

There are a few reasons you should always brown the ground beef, or any ground meat, in a skillet before adding it to the slow cooker. The main reason, slow cooking raw ground beef does not brown the meat properly, which is where the flavor comes from. Browning it first also ensures you’re not adding extra fat to the dish.

If you’re wanting to cook this recipe all in one pot, the best solution is to buy a crockpot that has a sauté function. Once the meat has browned, just switch to the slow cooker mode.

  • 10.5 ounces cream of mushroom soup 1 can
  • 3 Tablespoons onion soup mix 1 packet
  • 1 cup beef broth
