My Crockpot Corned Beef and Cabbage is one of the most satisfying, hands-off dinners I make all year. I load up the slow cooker in the morning, and by dinnertime the beef is fall-apart tender, the potatoes are buttery and soft, and the whole house smells amazing. It takes about 15 minutes of prep and the crockpot handles everything else.

  • No Yukon gold potatoes? Red potatoes are a great swap and hold up just as well in the slow cooker.
  • Prefer red cabbage? You can use it in place of green cabbage for a slightly different flavor and a pop of color.
  • No seasoning packet? Use one tablespoon of pickling spice. It gives you the same classic corned beef flavor.
  • Want to skip the honey mustard? A simple whole grain mustard on the side works great, or serve it plain with just the broth spooned over.

How to Make Crockpot Corned Beef and Cabbage

  1. Place the carrots, onion, garlic, and fresh thyme in the bottom of a 6 to 8 quart crockpot.
  2. When ready to serve, whisk together the Dijon mustard and honey in a small bowl.
  1. Set the corned beef brisket on top of the vegetables, fat side up. Sprinkle the seasoning packet evenly over the top.
  2. Pour in the beef broth and Worcestershire sauce. Add the salt and pepper.

5. Remove the brisket and slice it against the grain. Serve alongside the vegetables with the honey mustard on the side.

  • Always cook fat side up – The fat renders down over the meat as it cooks, keeping the brisket moist and flavorful throughout the full 8 hours.
  • Don’t add the cabbage too early – Putting it in after 5 to 6 hours keeps it tender without turning it to mush. It only needs 2 to 3 hours in the pot.
  • Keep cabbage wedges intact – Cutting wedges instead of chopping the cabbage helps it hold its shape and makes serving much easier.
  • Cut large potatoes in half – If your Yukon golds are on the bigger side, halve them so they cook evenly alongside the brisket.
  • Slice against the grain – This is the key to tender corned beef. Look for the direction of the muscle fibers and cut perpendicular to them.
  • Let the meat rest – Give the brisket about 5 minutes before slicing so the juices redistribute and every slice stays juicy.

You can give it a quick rinse to remove some of the surface brine, which can reduce how salty the final dish is. It’s completely optional and comes down to personal preference.

Can I make this ahead of time?

Yes. You can prep and refrigerate everything the night before, then start the crockpot in the morning. Leftovers reheat beautifully too, so this is a great make-ahead dinner.

What if my corned beef doesn’t come with a seasoning packet?

Use one tablespoon of pickling spice. It has all the same spices, including mustard seed, coriander, and bay leaf, and gives you that classic corned beef flavor.

Do I have to add the cabbage and potatoes separately?

Yes, and it makes a real difference. Adding them in during the last 2 to 3 hours keeps them from overcooking. Cabbage added at the start turns soft and falls apart.

  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 small head green cabbage cut into wedges
  • 1 1/2 pounds yukon gold potatoes
  • 3 Tablespoons dijon mustard
  • 3 Tablespoons honey

Instructions

  • Place the carrots, onion, garlic, and thyme in the bottom of a 6-8 quart crockpot.

  • Set the brisket on top, fat side up, and sprinkle with the seasoning packet.

  • Add the broth, Worcestershire sauce, salt, and pepper.

  • Cover and cook on low for 8 hours.
  • After 5-6 hours, add the cabbage wedges and potatoes around the brisket. Cover and continue cooking until tender.

  • If the potatoes are large, cut them in half for even cooking.
    Keeping the cabbage wedges intact helps them hold their shape during cooking.
  • In a small bowl, whisk together Dijon mustard and honey.

  • Slice the corned beef against the grain and serve with the vegetables and honey mustard.
