S’mores Popcorn has the best flavors found at all great campfires packed into delicious bite-sized pieces. Made with graham crackers, marshmallows, milk chocolate chips, and white chocolate melting wafers, this recipe combines sweet and salty and comes together in just 10 minutes.

You can use the Instant Pot to pop the popcorn or just use pre-popped corn.

Instant Pot S’mores Popcorn

Made with graham crackers, marshmallows, milk chocolate chips, and white chocolate melting wafers, this recipe is so delicious. It has the best flavors found at all great campfires packed into every bite.

Popcorn is one of the best snacks for movie nights and parties, but this s’mores popcorn takes popcorn snacking to the next level. There’s nothing better than curling up on the sofa to watch your favorite movie with a warm blanket and a big bowl of homemade popcorn and other treats to satisfy a sweet tooth.

There are so many different popcorn recipes out there, and while we do enjoy classic salty popcorn from time to time, this s’mores one is a family favorite. Crunchy graham crackers mixed with gooey marshmallow is a winning combination.

  • Popcorn Kernels
  • Butter
  • White Chocolate Melting Wafers
  • Mini Marshmallows
  • Mini Milk Chocolate Chips 
  • Graham Crackers

Instructions

Step One: Melt butter in Instant Pot.

  • Turn your instant pot to sauté mode. Wait for it to get hot, and then add in your butter. Let your butter completely melt.

Step Two: Add Popcorn Kernels and Salt.

  • Add in your popcorn kernels and salt. Stir well to coat your kernels with butter and salt.

Step Three: Cook the Popcorn in the Instant Pot

  • Place the lid on your instant pot to seal in the heat.
  • Your popcorn kernels will start to pop.
  • Allow them to continue to pop until you stop hearing popping for at least 20 seconds.
  • Once they have stopped popping for at least 20 seconds, press cancel on your instant pot and remove the lid.

Step Four: Add Mix-ins

  • Transfer your buttery popcorn to a large bowl. Be careful not to transfer any kernels with the popcorn.
  • In a small microwaveable bowl, melt your white chocolate wafers. Microwave in 30-second intervals, stirring with a spoon.
  • Once your chocolate has completely melted, evenly distribute and pour over your popcorn. Stir together making sure that each popcorn is covered in chocolate.
  • Quickly, before the white chocolate melts, make an even layer with the sticky popcorn mixture on a baking sheet covered in parchment paper. Immediately distribute the marshmallows, chocolate chips, and graham crackers on top of the popcorn. Mix together.

Step Five: Cool and Serve

  • Allow the popcorn mixture to fully cool on the counter at room temperature, or to speed up the process, in the refrigerator.
  • Serve and enjoy.

Tips for Making This Recipe

  • We do recommend using kernels to make the freshest popcorn in the instant pot. You can also make popcorn from kernels on the stove.
  • To enhance the flavors, add extra salt to the popcorn right after it comes out of the instant pot, so that it sticks to the hot popcorn. 
  • For even cooking in the instant pot, make sure that the kernels are evenly layered at the bottom of the instant pot before cooking.

Suggestions and Alternatives

  • You can make this s’mores popcorn recipe with any kind of popcorn, whether it’s microwave popcorn or made in an air popper. If you do this, make sure it doesn’t have any butter flavoring on it, and just follow the recipe from step 5 onward. 
  • Use different kinds of chocolate to make different patterns in the mix, and to get a variety of flavor. 
  • Add your favorite small candy to the mix for extra flavor and texture. 
  • You can use Golden Grahams instead of graham crackers.
  • Top your popcorn with a dusting of cocoa for an extra chocolatey finish.
  • You can make this recipe vegan by using vegan alternatives for melting chocolate, marshmallows, and chocolate chips, and by substituting the butter for a cooking oil like coconut oil or olive oil.

Are White Melting Wafers the Same as White Chocolate?

While white chocolate melting wafers (also called candy melts) may taste chocolatey, they are quite different from white chocolate itself. The ingredients of candy melts are sugar, milk solids (powdered milk), vegetable oils, flavorings, and food coloring.

Candy Melts have been designed to melt, while white chocolate may not work in the same way. If you’re wondering whether you can use white chocolate instead of candy melts, we wouldn’t recommend it. The best substitution for white chocolate melting wafers would be melted marshmallows to make a popcorn marshmallow mixture.

How To Store This Recipe?

  • Countertop: If you do have leftovers, store them in an airtight container, or covered in plastic wrap for up to 2 days. Overnight the popcorn will slightly absorb some of the moisture from the other ingredients, but it will still taste good the next day.

  • 1 oz graham crackers about 2 sheets, or more if needed, crushed
