My Cosmic Cookies taste just like a Little Debbie brownie, and my kids ask for them all the time. With one bowl and simple pantry ingredients, they come together in under 30 minutes and always turn out fudgy in the middle with perfectly set edges.

Cosmic Cookie Recipe
A while back, I shared my Homemade Cosmic Brownies recipe and it quickly became a reader favorite. Seeing how much everyone loved that nostalgic dessert, I was inspired to turn those same flavors into these Cosmic Cookies. They have everything people love about the brownies, but in a cookie version you can scoop, bake, and share without needing a knife.
I knew the cookie had to be just as delicious as the ganache and sprinkles on top. I add an extra egg yolk to give the centers their rich, chewy texture, while a little espresso powder deepens the cocoa flavor. I also chill the dough before baking, so the cookies stay thick enough to hold that smooth layer of ganache. They’re rich, chocolatey, and every bit as good as they look.

Why My Cosmic Brownies Cookies Are the Best
- More brownie than basic chocolate cookies – My recipe uses cocoa powder, brown sugar, an extra egg yolk, and espresso powder to create a deeper chocolate flavor with the richness you expect from a brownie.

For the Cookie Dough
- Butter – Butter gives the dough richness and helps the cookies spread without becoming thin or greasy.
- Cocoa powder – Unsweetened cocoa powder creates the deep chocolate flavor that separates these from ordinary sprinkle cookies.
- Instant espresso powder – A small amount brings out the cocoa flavor. It will not make the finished cookies taste like coffee.
- Granulated sugar – This sweetens the dough and helps create lightly set edges.
- Brown sugar – Brown sugar adds moisture and gives the cookies a richer flavor than granulated sugar alone.
- Egg and egg yolk – The whole egg binds the dough, while the additional yolk gives the centers a denser, brownie-like consistency.
- Vanilla extract – Vanilla rounds out the cocoa and chocolate flavors.
- All-purpose flour – Flour gives the cookies enough structure to hold the ganache without making them heavy.
- Baking powder – This gives the cookies a small amount of lift so they do not bake up overly dense.
- Baking soda – Baking soda encourages spreading and helps the edges set properly.
- Salt – Salt balances the sugar and keeps the chocolate flavor from tasting flat.
For the Ganache Topping
- Heavy cream – Warm heavy cream melts the chocolate chips and creates a smooth, spreadable ganache.
- Chocolate chips – These form the chocolate topping. Semisweet chips give the cookies a balanced flavor, but milk chocolate can be used for a sweeter finish.
- Rainbow sprinkles – These give the cookies their recognizable Cosmic Brownie appearance and a little crunch on top.
Substitutions or Variations
- Want a darker chocolate flavor? Replace half of the regular cocoa powder with dark cocoa powder.
- Out of espresso powder? Leave it out or replace it with a small amount of finely ground instant coffee.
- Prefer milk chocolate? Use milk chocolate chips in the ganache for a sweeter, creamier topping.
- Want more chocolate? Fold mini chocolate chips into the dough before baking.
How to Make Cosmic Brownie Cookies

- Preheat the oven to 350° F and line two baking sheets with parchment paper.
- Melt the butter, then add the hot melted butter to the bowl of a stand mixer. Add the cocoa powder and espresso powder and mix until smooth and well incorporated.
- Add the sugar, brown sugar, egg, egg yolk and vanilla to the chocolate mixture and mix until fluffy and combined.


- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined and no streaks of flour remain.
- Cover the dough and refrigerate for 30 minutes to firm up.


- Scoop the dough into portions (about 2 tablespoons each), roll into balls, and place on the prepared baking sheets about 2 inches apart.
- Gently flatten each ball with the bottom of a glass to create an even surface.
- Bake for 10-12 minutes, until the cookies are set. Let cool on a wire rack.


- While the cookies cool, heat the cream until hot, but not boiling, and pour over chocolate chips, do not stir. Let sit for about 10 minutes, then stir gently until smooth to create the icing.
- Once cookies are completely cool, spoon ganache onto each cookie and spread evenly. Top with rainbow sprinkles. Let the topping set up before storing them.

- Measure the flour carefully – Spoon the flour into the measuring cup and level it with a knife. Scooping directly from the bag can pack in too much flour and make the cookies dry.
- Sift the cocoa powder – Cocoa often contains small lumps that are difficult to mix out once the wet ingredients are added.
- Use room-temperature eggs – Eggs blend more evenly into the butter and sugar when they are not cold from the refrigerator.
- Use a cookie scoop – Even portions help the cookies bake at the same rate and give the finished batch a more uniform appearance.
Cosmic Cookies FAQs
What Type of Cocoa Powder Works Best?
Natural unsweetened cocoa powder is the best choice for this recipe because it works properly with the baking soda. Dutch-process cocoa has a different acidity level and may change how the cookies rise and spread.
How Do I Know When the Cookies are Finished Baking?
The edges should look set, while the centers may still appear slightly soft. They will continue to firm as they rest on the baking sheet. Waiting until the centers look completely baked can result in dry cookies.
Can I Make the Ganache Ahead of Time?
You can prepare the ganache a day in advance and refrigerate it in an airtight container. Let it come to room temperature, then stir until smooth before spreading it over the cookies.
Storage Instructions
- Refrigerate – Once the ganache has set, place the cookies in an airtight container with parchment paper between the layers. Refrigerate them for up to five days. Let them sit at room temperature for 15 to 20 minutes before serving.
- Freeze – Freeze the cookies in a single layer until firm, then transfer them to a freezer-safe container. Place parchment paper between the layers and freeze for up to two months. Thaw them in the refrigerator or at room temperature.
