I’m always searching for easy party food recipes that will be a huge hit with friends and family and I found it with this yummy Reuben dip! This recipe is like having the best of both worlds. It has all the elements of a warm and cheesy dip, plus it has all of the those same traditional Reuben sandwich flavors that everyone loves. And the great thing is, this amazing dip can be ready, from prep to plate, in just about 30 minutes.
Once the dip has baked and it’s warm and gooey, serve it with a variety of crackers and chips. To give it a true Reuben touch serve it with rye crackers, rye chips. cocktail rye bread squares or even toasted slices of rye bread.
You can also serve it with pretzel rods, toasted pumpernickel bread, pita chips, buttery crackers or bagel chips. - Corned beef (deli counter)
- Sauerkraut (drained well and squeezed dry)
- Mayonnaise
- Thousand island dressing
- Chive and onion cream cheese (softened to room temperature)
- Swiss cheese (shredded)
- Fresh chives (chopped)
🥄 Hot to Make Hot Reuben Dip
Preheat the oven to 350 degrees f. Rough chop the corned beef. Reserve 1 tbsp of the meat to sprinkle on dip before baking.
Step One: Combine Wet Ingredients
- Add the dressing, the cup of mayonnaise and cream cheese to a medium bowl and blend using a mixer until fully combined.
Step Two: Add the Sauerkraut and Corned Beef
- Add the cup sauerkraut to the bowl (make sure you have drained it well).
- Add the chopped meat and 1 ½ cups cheese. Mix by with a large spoon until well blended.
Step Three: Add to Skillet
- Add the reuben mixture to a cast iron pan and spread evenly. If you don’t have a cast iron pan, spray a baking dish with non-stick cooking spray.
- Sprinkle with remaining shredded Swiss cheese, chives and reserved corn beef (optional).
Step Four: Bake and Serve
- Bake for 25 minutes or until bubbly and golden. Leave in oven a minute or two longer, under the broiler, to brown cheese further if desired.
Serve immediately at your next gathering and watch it disappear!
Reuben Dip Tips and Variations
- Corned beef: We used deli style corned beef as a quick and easy option. You can always use leftover homemade corned beef if you prefer.
- Cream Cheese: Because cream cheese is really thick, make sure you allow it to come to room temperature. This makes it easier to mix in the other ingredients. If you prefer to use plain cream cheese, you can. You may want to add fresh chopped chives to the dip to give it the same flavor.
- Sour Cream: If you want to use a little less mayo, you can use ½ mayo and ½ sour cream or Greek yogurt.
- Cheese: If you have the time, shred the cheese from block form. It melts a lot better than pre-shredded cheese. You can change up the cheese and use any of you favorite melty cheeses, though Swiss gives this recipe the true flavor of a deconstructed reuben.
- Make Ahead: You can assemble the ingredients the day before you are serving it. Just add everything, except the extra cheese, reserved tablespoon corned beef and chives for the topping, cover it with plastic wrap and store in the fridge. Before serving, just spread the dip into the skillet, add the remaining shredded Swiss cheese, chives and reserved corn beef and bake until the slow cooker reuben dip is hot and bubbly.
- Dressing: Instead of Thousand Island, you can use Russian dressing instead.
What is Corned Beef?
Corned beef is made using beef brisket. It has been cured in a salty brine with a combination of other spices like peppercorns, mustard seeds, coriander, cloves and bay leaves.
If you have been wondering why it is called corned beef, you probably may be surprised to know corn has nothing to do with the way the brisket is cured. The “corn” in corned beef comes from the grains of salt that is used in the curing mixture. Who knew?!
Because of the method used to process it, once it has finished curing it does not taste much like beef at all. It has wonderful briny flavor and a signature pinkish hue. It’s super tender and is a staple during St. Patrick’s Day celebrations.
Can I Make This Delicious Dip in the Crock Pot?
This recipe makes the ideal portion size for a large skillet. But you can also make it in a small crockpot. If you are feeding a large crowd, it’s also the perfect appetizer recipe that you can easily double. To make this a crockpot reuben dip, just mix up all the ingredients in a large bowl, add them to your slow cooker. Cook for about an hour two on high or until the cheese is melted and the dip is hot.
