There’s nothing quite like crispy chips and crunchy vegetables dipped in a warm and creamy sausage dip, and this is my favorite recipe. Rotel tomatoes with green chilies are so delicious, and because they come in different levels of spiciness and flavors this recipe has endless possibilities.
Rotel cheese dip works great as an easy appetizer for dinner parties, and it’s a handy recipe for any special occasion like the Fourth of July or Super Bowl Sunday. Just put the browned ground beef, chili powder, tomatoes and Velveeta in the Crockpot, cook it and keep it on a warm setting throughout the day. Step One: Brown and Season the Meat
- In a medium skillet, brown the ground beef and sausage.
- Season with chili powder and salt and pepper to taste.
Step Two: Put in Crockpot
- Add the meat to the bottom of your crockpot.
Step Three: Add Velveeta and Tomatoes
- Chop Velveeta into cubes and add to crockpot.
- Add tomatoes.
Step Four: Cook on Low
- Put the lid on the crockpot and set it on low for 2 hours.
- Stir dip and serve hot with tortilla chips and veggies.

- Substitute Rotel tomatoes for freshly chopped tomatoes if you can’t source them.

Notes
