These brownie truffles make a great Valentines’ treat for a school party, or as little gifts for Valentine’s Day.

Ingredients

box of brownie mix, corn syrup, water, and pink, purple, and red sprinkles
  • Brownie mix – any brand will do
  • chocolate syrup
  • corn syrup
  • water
  • Valentine’s Day sprinkles – you’ll need an entire cup of sprinkles to cover all the brownie truffles

Instructions

four pics: brownie mix in glass bowl; added water and corn syrup to brownie mix; stirred together with wooden spoon; cookie scoop in batter
  • Place the dry brownie mix in a large microwave safe mixing bowl. Place in microwave and heat in 30 second increments stirring between each increment for about 1 ½ minutes or until temperature is 160.
  • Remove from microwave and add in corn syrup, chocolate syrup and water and stir until the mixture is smooth.
  • Place sprinkles in a shallow dish or on a plate.
  • With a cookie scoop, scoop out one tablespoon of brownie mixture at a time and roll into a ball with your hands. If you dampen your hands with a little water, it will keep the batter from sticking to them.
  • Roll the chocolate balls in the sprinkles to coat and place on plate or baking sheet.
  • Repeat until all batter has been made into truffles.
  • Chill brownie truffles for at least one hour before serving.
  • Store in an airtight container and serve chilled.

Suggestions and Alternatives

  • Powdered sugar – turn them white by dredging in powdered sugar
  • Chopped nuts – you an add chopped nuts to the chocolate mixture or to the outside of the truffles
