🥄 Tools Needed
- large saucepan
- mixing spoon
- large mixing bowl
- 9 x 13 baking dish
- parchment or wax paper
- cooking spray
🛒 Ingredients
The recipe requires only a few simple ingredients, including Lucky Charms cereal, mini marshmallows, butter, salt, and optional rainbow sprinkles. You can make a batch in just 15 minutes, and then let them set for an hour to cool and become firm.
- 1 stick unsalted butter, melted
- ¼ teaspoon salt
- 10 ounce bag mini marshmallows
- 10 cups of Lucky Charms cereal – 1 box of Lucky Charms
- ½ cup Lucky Charms marshmallows for topping (optional)
- Rainbow sprinkles (optional)
🥄 Instructions
Spray a 9 x 13 baking dish with cooking spray and line with parchment paper and set aside.
Step One: Melt Butter and Marshmallows
- Start by melting a stick of unsalted butter in a large pot over low to medium heat. Add a quarter teaspoon of salt to balance out the sweetness.
- Add mini marshmallows to the pot and stir constantly until it melts. Don’t worry if there are small lumps of marshmallows remaining.
Step Two: Add Cereal
- Once the marshmallows have melted, remove the pot from the heat and add 10 cups of Lucky Charms cereal to the gooey marshmallows. Fold the cereal mixture together with a wooden spoon until it’s evenly coated with the melted marshmallow mixture. Be careful not to crush the cereal while stirring.
Step Three: Press Mixture into Prepared Pan
- Gently spread the mixture into the prepared baking dish. Use a rubber spatula to press down into the bottom of the pan in an even layer. Don’t press it too hard, or you’ll end up with hard treats.
- Immediately top with extra Lucky Charms marshmallows and rainbow sprinkles.
- Remove from pan and cut into squares.
Suggestions and Alternatives
- Allow the mixture to cool completely on the counter for 30 minutes to 1 hour before slicing into bars. The result is a crunchy, sweet, and extra gooey treat that kids and adults alike will love.
- It’s important to note that the salt is a crucial ingredient in this recipe. The treats are very sweet, and the salt helps to balance out the flavors. So, don’t skip it!
- Also, resist the temptation to add more mini marshmallows to the mixture. The treats are already gooey enough, and adding more marshmallows will make them too sweet. A 10-ounce bag of mini marshmallows is plenty, along with the marshmallows in the cereal.
- If you don’t have a 9 x 13 baking pan, you can use two 8 x 8 square pans instead. Alternatively, you can half the recipe and use one 8 x 8 pan. However, it’s not recommended to make this recipe in a smaller pan to try and make them thicker, as they will be too difficult to eat.
- Chocolate coating – use any candy coating, melted chocolate, or almond bark and dip the squares into the melted chocolate
We love easy dessert recipes and these are perfect for the holiday or an after school snack. The colorful marshmallows make is a really pretty and sweet treat.
How Do You Store Lucky Charms Treats?
These delicious cereal bars are best eaten the same day, but you can store leftovers in an airtight container on the counter for up to 2 days. However, any longer than that and they will start to get hard and stale.
Refrigerating Lucky Charms bars will harden them, so it’s not recommended.
