St. Patrick’s Day Cake Pops

St. Patrick’s day cake pops are a fun treat made with white cake mix, cream cheese frosting dipped in green chocolate and topped with sprinkles!

These are perfect treats to make with your kids to try to trap a St. Patrick’s Day leprechaun.

Ingredients

cake pop ingredients: cake crumbles, cream cheese frosting, sprinkles, green candy melts, chocolate coins
  • cake – make a box mix as a sheet cake and you’ll have plenty of cake to use for this recipe
  • cream cheese frosting – just 2 tablespoons
  • candy melts – green candy melts work great for the chocolate coating
  • sprinkles – we used white, but gold would be fun too!
  • cookie sticks – you can get these as many grocery and almost all craft stores

How to Make St. Patrick Cake Pops

  • In a large bowl, crumble your cake.
  • Add in your cream cheese frosting. Mix well with a hand mixer, spoon, or stand mixer.
  • Divide your cake into 10 sections. With the palm of your hand, round out each portion into a ball shape.
  • Place your cake pops on a sheet pan or plate, and place in the freezer for 15 minutes.
  • While your cake pops are in the freezer, place all of your candy melts in a medium sized bowl. Microwave for 30 second intervals until completely melted.
  • Remove the cake pops from the freezer.
  • Place your cookie stick in the candy melt, then the cake pop. Then add your cake pop to the candy melts. Coat the pop completely with the melt. On the side of the bowl, tap it gently with the stick removing any excess chocolate from the cake pop to create a smooth finish.
  • Place the cake pop on the parchment paper. Immediately add your sprinkles before the chocolate dries. In the corner of your cake pop, push in your gold coin.
  • Continue steps 6 – 8 until each cake pop is complete.

Tips

  • Use candy melts. Don’t try to color white chocolate. While it’s possible to use chocolate that’s colored, the candy melts are a perfect melting chocolate and are already perfectly colored

While these sweet treats are geared toward St. Patrick’s Day with a little pot of gold, you could leave the gold candy off and make these for Dr. Suess’ birthday day on March 2!

  • 10 count 6 – inch cookie sticks
  • 10 gold coins
  • 3 TBSP white sprinkles
