- Mini Marshmallows
- Butter
- Rice Krispies Cereal
- Red Velvet Cake Mix
- Vanilla Extract
- White Chocolate Chips
- Taste Free Red Gel Food Coloring
Instructions
Step One: Prep the pan and make the melted marshmallow mixture.
- First prepare a 13×9 pan by lining it with parchment paper and buttering the parchment.
- In a large pot over medium heat melt marshmallows and butter stirring frequently until completely melted and smooth.
- Remove from heat and add in cake mix and vanilla, stir until well mixed.
- Add in ½ – 1 tsp of red food coloring and stir to incorporate, add more if necessary to achieve desired color.
Step Two: Mix in Rice Krispies, cool, and add white chocolate topping.
- Add in rice krispies and stir to coat. The mixture will be very thick.
- Place mixture in prepared pan and evenly press into place.
- Allow to cool completely.
- Remove the treats from the pan and cut into 16 even rectangles.
- Place the little white chocolate chips in a microwave safe bowl and microwave them in 30 second increments stirring in between until melted and smooth.
- Place the melted chocolate in a piping bag or a zip top baggie. Cut off the end or corner and pipe chocolate across each treat.
- Allow chocolate to cool. Store treats in an airtight container for up to 3 days.

- Make sure your treats are fully cooled before you top them with the melted chocolate, otherwise the chocolate will melt into the rice krispie mixture.
- Use the pillowy mini marshmallows as their large surface area will make them melt more evenly, if you can only source large marshmallows then cut them up for the same effect.

While they are made with rice cereal that can be a part of a healthy breakfast, these treats are packed with sugar from marshmallows and cake mix and cannot be considered healthy.
Why Are My Rice Krispy Treats Hard?
Hard Rice Krispie treats could be the result of melting marshmallows too quickly on high heat. Instead, melt them slowly on medium or even low heat, if you’re using a smaller pan.

You can store these treats at room temperature wrapped in plastic wrap or in an airtight container for up to 3 days.
Can I Freeze Rice Krispie Treats?
Wrap the bars tightly with a double layer of plastic wrap and then with a layer of foil. They should freeze well for up to 3-4 months. To thaw, place them in the fridge overnight.
