Mexican Fajita Burgers

We love our outdoor grill. In the height of summertime when it’s just too hot to turn on the oven, it’s a lifesaver. These flavorful burgers are a family favorite for us because they are so quick and easy to make. This fajita burger recipe will take your burgers to the next level!

We love chicken fajitas with cooked peppers and onion mixed with fajita seasoning, but these fajita burgers are perfect for grilling. Living in the mountains in NC we love our open spaces and getting out in nature, so we eagerly await summer to take advantage of the outdoors.

Making burgers from scratch is great because you can tailor them to your own preference and with this recipe, it couldn’t be any easier! You’ll get a delicious burger every time if you follow these easy steps. If you make burgers from scratch for the first time, let me know how it went in the comments at the bottom of the post.

Ingredients

Made with ingredients you can easily find at your local grocery store.

Ingredients of Fajita Burgers. This includes bell peppers, ground beef, onions, burger buns, spices and avocado.
  • Onion
  • Red Pepper
  • Yellow Pepper
  • Lean Ground Beef (you can also use ground turkey)
  • Chili Powder
  • Smoked Paprika
  • Cumin
  • Dried Oregano
  • Garlic Powder
  • Onion Powder
  • Ripe Avocado
  • Salsa Verde
  • Olive Oil

Instructions

Four images show: sliced onions and peppers with a knife, ground beef with spices in a bowl, formed raw fajita burger patties on a plate, and patties cooking in a cast iron skillet.
  1. Thinly slice peppers and onions. Heat olive oil in a large skillet over medium heat. Add the sliced pepper and onion to the oil and sauté stirring frequently over medium heat until soft and caramelized.
  2. While the peppers and onions are cooking combine the meat and spice mixture in a medium mixing bowl kneading to mix well. Separate the meat mixture into 4 equal patties and set them aside.
  3. When the bell peppers and onions are cooked remove them from the pan and set aside in a small bowl. Put the pan back on medium heat (don’t wipe the pan) and place the burgers in the pan. Seer over medium to high heat and cook until the desired level of doneness (about 5-6 minutes per side over medium heat to cook to medium/well).
  4. While the burgers are cooking place the salsa verde in a medium bowl peel and chop the avocado and add it to the salsa. Mash and mix it until well blended.
  5. Serve the burgers topped with the bell pepper and onion mixture, the salsa and avocado mixture, and any other desired toppings!

Suggestions and Alternatives

  • A great way to add spiciness is to combine chili powder with cayenne pepper and mix it into the mince mixture. Hot sauce is also good for this.
  • Add Pepper Jack cheese slices for extra Tex-Mex flair or a smoky cheese like Provolone to enhance the smoky BBQ flavors. Classic cheddar cheese is great too.
  • Add a cheese slice to the burger once it is cooked, and put it on the cooler side of the grill to melt the cheese before putting it on the burger bun.
  • Put chopped fresh cilantro on top of the burger once cooked, or add it to the mince mixture before grilling.
  • You could use a regular salsa as well as the salsa verde guacamole, or even sour cream on the bottom bun.
  • Use sour cream instead of mayonnaise as a topping, or even greek yogurt.

Can you Make Fajitas with Hamburger?

Absolutely! This recipe makes the best fajita hamburgers using beef mince and all your favorite fajita flavors. Alternatively, you can use hamburger to make fajitas by using this recipe, just cook the mince mixture without making it into patties beforehand and put all your filling into a warm tortilla instead of a burger bun.

What Goes with Fajita Burgers?

Fajita burgers combine the best of both worlds, classic American barbecue and Mexican cuisine. For our summer cookouts we like to have a range of sides, and these burgers taste great paired with just about anything. Try coleslaw, BBQ baked beans, guacamole, or black bean dip to really enjoy this Tex-Mex meal.

How Do I Store This Recipe?

A cooked fajita burger can be stored in the refrigerator in an airtight container or covered in plastic wrap for up to 3 days.
