Thinly slice peppers and onions. Heat olive oil in a large skillet over medium heat. Add the sliced pepper and onion to the oil and sauté stirring frequently over medium heat until soft and caramelized.
1 Vidalia onion, 1 red pepper, 1 yellow pepper, 1 Tbsp olive oil
While the peppers and onions are cooking combine the meat and spice mixture in a medium mixing bowl kneading to mix well. Separate the meat mixture into 4 equal patties and set them aside.
1 pound lean ground beef, 1 tsp chili powder, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp dried oregano, 2 tsp garlic powder, 1 tsp onion powder
When the bell peppers and onions are cooked remove them from the pan and set aside in a small bowl. Put the pan back on medium heat (don’t wipe the pan) and place the burgers in the pan. Seer over medium to high heat and cook until the desired level of doneness (about 5-6 minutes per side over medium heat to cook to medium/well).
While the burgers are cooking place the salsa verde in a medium bowl peel and chop the avocado and add it to the salsa. Mash and mix it until well blended.
1 Tbsp salsa verde, 1 avocado
Serve the burgers topped with the bell pepper and onion mixture, the salsa and avocado mixture, and any other desired toppings!
