My Easy Churro Chex Muddy Buddies Recipe

Some days you want something sweet, but you do not want to turn on the oven or dirty a pile of dishes. That is exactly when this recipe comes in. It takes about 10 minutes of hands-on time, and the cinnamon sugar coating does all the work of making it taste like something from the fair.

I first learned how to make muddy buddies from one of my son’s teachers. She used the recipe as a math lesson. Best tasting math lesson ever!

They are easy enough for kids to help with, and the shaking part is the best job in the kitchen. Nothing here is tricky, so you do not need to worry about the white chocolate seizing or the coating turning out clumpy.

Why My Churro Muddy Buddies Are So Good

  • Only 4 ingredients – everything is a pantry staple, so you can make a batch without a special trip to the store.
  • No oven needed – the white chocolate melts in the microwave in under a minute, which keeps the kitchen cool and cleanup simple.
  • Shake-in-a-bag coating – the cinnamon sugar coats every piece evenly, with no sticky bowl and no clumps.

Churro Muddy Buddy Ingredients

Four bowls with ingredients for Churro Muddy Buddies recipe: Chex cerea, white chocolate chips, white chocolate wafers, white sugar and cinnamon arranged on a white surface.

Below is a list of the ingredients you’ll need to make this recipe. Scroll down to the full recipe card for the specific amounts.

  • Chex cereal – the crisp, light base that holds the coating without getting soggy.
  • White chocolate chips or white chocolate wafers – melts into a smooth, creamy layer that helps the cinnamon sugar stick. Wafers melt a little more smoothly, but chips work great.
  • White sugar – gives the coating that sweet, slightly crunchy churro finish.
  • Cinnamon – the flavor that makes these taste like churros. Use the lower amount for a mild flavor or the higher amount for a bold one.

Substitutions or Variations

  • No white chocolate? Use almond bark or vanilla candy melts instead.
  • Want it dairy-free? Look for dairy-free white chocolate chips and use coconut oil to thin them if needed.
  • Want a caramel twist? Drizzle the finished muddy buddies with caramel sauce and let it set.
  • Prefer a deeper flavor? Swap half of the white sugar for brown sugar in the cinnamon mixture.
  • Want a little salt? Sprinkle a tiny pinch of sea salt over the cereal before it sets for a sweet and salty bite.

How to Make Churro Muddy Buddies

Here are my step-by-step instructions so you can make this recipe with ease. For the full, printable recipe with amounts and temperatures, scroll down to the recipe card below.

Step One: Prepare the Ingredients

  1. Place the cinnamon and sugar in a gallon-sized Ziploc bag. Shake to combine and set aside.
  2. Measure the Chex cereal into a large bowl. (We used Rice Chex cereal but you can use any kind of Chex that you prefer.)
  3. Place the white chocolate chips in a small bowl and microwave for 25 seconds. Stir and reheat as needed.

Step Two: Coat and Mix

  1. Carefully pour the melted white chocolate chips over the Chex cereal and stir gently to coat.
  2. Scoop the coated cereal into the bag with the cinnamon sugar mixture, then seal and shake to coat the cereal completely.
  3. Pour mixture onto a cookie sheet lined with parchment paper and let it sit for approximately 30 minutes, or until the white chocolate is completely set.

  • Add coconut oil – If you add a bit of coconut oil or shortening to your white chocolate before microwaving, it will melt more smoothly.
  • Stir gently – be gentle when stirring the melted chocolate into the cereal, so that you don’t crush the cereal pieces.
  • Use a rubber spatula coated in coconut oil when mixing the chocolate and cereal to prevent the chocolate from sticking to the spatula.
  • Bag it while the chocolate is still wet – Move the coated cereal into the cinnamon sugar right away, because the cinnamon sugar sticks best to tacky white chocolate.
  • Shake, do not squeeze – Seal the bag with some air inside and give it a good shake so the coating spreads evenly without breaking the cereal.
  • Let it set completely – Spread the cereal in a single layer on the cookie sheet so it sets crisp and does not clump together.
