This no-churn Butterbeer Ice Cream recipe inspired by the wonderful wizarding world of Harry Potter is so creamy and rich. We think it’s the best Homemade Butterbeer Ice Cream. It’s so much fun to make and transports you to the Three Broomsticks Inn in Hogsmeade.

Butterbeer Ice Cream

A couple of years ago we took the kids to Universal Studios and Islands of Adventure to visit Harry Potter’s World. Both parks have Harry Potter sections that were amazing – it’s like a Harry Potter theme park within the bigger Universal theme parks. They had larger-than life buildings, Diagon Alley, different restaurants, and fire-breathing dragons all in one setting. It looks just like the Harry Potter movies.

It was a great way to celebrate our kids reading the Harry Potter books, and both of my kids love the Harry Potter series so much they couldn’t wait to see the Wizarding World come to life.

As the Universal Orlando Resort theme parks are the only place you can buy the official Butterbeer, I felt the need to make a copycat Homemade Butterbeer recipe so we can enjoy some hot butterbeer at home in our favorite souvenir mugs. 

The best part of recreating the Butterbeer flavor is being able to experiment with it, so this Butterbeer Ice Cream recipe just had to follow my new favorite Homemade Butterbeer Drink. Now the magical flavors can be enjoyed in any way – from hot to freezing cold.

Even if you aren’t a huge fan of the Harry Potter series, this Butterbeer Ice Cream is so delicious, it pairs perfectly with so many hot desserts too. If you love butterscotch, you’ll love this ice cream. 

Butterbeer Ice Cream is a delicious ice cream dessert that’s perfect for a Harry Potter series movie marathon, Harry Potter themed birthday parties, or any kind of party. Huge Harry Potter fans (and even those who haven’t read the books or seen the movies) will absolutely love this easy recipe. 

Ingredients

Made with simple ingredients you may already have at home.

Ice Cream Base

  • Sweetened Condensed Milk
  • Heavy Whipping Cream
  • Vanilla Extract

Butterscotch Sauce

  • Brown Sugar
  • Heavy Cream
  • Butter – room temperature

Instructions

Step One: Make the Ice Cream Base

  • Add cream to the bowl of an electric mixer. Using the whisking beater, beat the cream to stiff peaks.
  • In a large bowl, combine the condensed milk and the vanilla extract.
  • Fold in the whipped cream. Set aside in the refrigerator.

Step Two: Make the Butterscotch

  • In a saucepan, add the brown sugar, cream and butter.
  • Stir to combine. Cook on a medium heat until sugar is melted.
  • Lower heat and cook for 5 minutes without stirring.
  • Once everything is combined and thickened, remove from the heat and place in a jar to cool.

Step Three: Mix the Ice Cream and Butterscotch

  • Line a loaf pan with parchment paper.
  • Spoon half of the ice cream base into the loaf pan and spread until even.

  • Drizzle the cooled butterscotch sauce over the top of the ice cream.
  • Top with the rest of the ice cream base.
  • Drizzle the top with the butterscotch sauce.
  • Take a spoon and swirl the sauce through the ice cream then cover with plastic wrap and place in the freezer for 3 or more hours until set.
  • Once the ice cream hardens, serve on cones or in a dish.

Suggestions and Alternatives

  • dding pecans or walnuts would add an interesting texture and the nutty flavor would work well with butterscotch. 
  • Make a delicious affogato with this ice cream by adding a scoop of it to a small cup and pouring a freshly made espresso on top – delicious! 
  • Add chocolate chips or whipped cream on top for a Butterbeer Sundae!
  • Evaporated milk can serve as a substitute for sweetened condensed milk if you don’t have any to hand. It won’t have the same sweet, caramelized flavor with it, but the consistency will be similar when using a cup for cup substitution.
  • Heavy cream can be substituted with this handy alternative in a pinch. Just melt ¼ cup unsalted butter and slowly whisk in ¾ cup whole milk or half-and-half. This makes the equivalent of 1 cup heavy cream.

This Butterbeer Ice Cream combines the butterscotch flavor with vanilla and the creaminess of this ice cream base to make a delicious sweet treat.

Can You Buy Butterbeer Ice Cream?

If you can get your hands on it, Yuengling makes a Butterbeer inspired ice cream that mixes buttercream and butterscotch together and has a butterscotch swirl. Personally, I prefer the homemade kind as you can experiment with different flavor combinations and it is a lot cheaper than store bought.

Does Butterbeer Ice Cream Have Alcohol?

Contrary to the name, Butterbeer doesn’t contain any kind of beer or other alcohol and nor does this ice cream recipe.

How to Make a Butterbeer Ice Cream Float

To make a butterbeer float Start by making our homemade butterbeer, then add a scoop of butterbeer ice cream into the drink. You could also just use vanilla ice cream.

Ice Cream Base

  • 14 ounce can Sweetened Condensed Milk
  • 2 cups Heavy Whipping Cream
  • 2 teaspoon Vanilla Extract

  • 4 Tablespoon Butter
