Ice Cream Sandwich Pops

Ice cream sandwich pops are a simple dessert that are so much fun to make. Dip ice cream sandwich bars in melted chocolate Magic Shell and decorate with colorful sprinkles, candy pieces, and cookies! These are a perfect treat on a hot summer day.

Ice Cream Sandwich Pops

We love upgrading pre-made desserts like this! By using ordinary ice cream sandwiches, you can make these mini ice cream sandwich pops with ease.

You’ll end up with double the amount of desserts because you cut each regular size ice cream sandwich in half. It’s the perfect size for little kids. They love these yummy treats all year long.

Ingredients

  • 1 box ice cream sandwiches
  • Magic Shell chocolate syrup
  • toppings
  • Popsicle sticks

What Toppings Can I Use?

Get creative and use any kind of topping you like the best.

  • Rainbow sprinkles
  • Oreo cookie crumbles
  • Crushed chocolate chip cookies
  • Crushed Butterfinger candy bars
  • Chopped mini Reese’s cups
  • M&Ms

Instructions

  • Using a sharp knife, cut ice cream sandwiches in half and place a popsicle stick in the ice cream portion, making a “popsicle.”
  • Place in freezer to refreeze for a few minutes. 
  • Place Magic Shell syrup in microwave safe bowl and microwave for 10 seconds, then stir.
  • Dip ice cream pops in the melted chocolate until all sides are covered. 
  • Immediately dip the top in sprinkles and set on a large cookie sheet lined with wax paper or parchment paper. 
  • Cover in plastic wrap and refreeze the finished pops until ready to serve.

Tips

  • Work fast – ice cream sandwiches melt fast. Refreeze them after you put the popsicle stick in.
  • Work in batches – cut the sandwiches and put them back in the freezer. Take one or two out at a time and put the popsicle stick in, then place back in freezer and get the next two out.
  • Use the same batch process to dipping each pop in the Magic Shell.

Can I Use Melted Chocolate?

You can try this recipe with melted chocolate. We’d add some coconut oil to the chocolate to give it a smooth finish.

If you use chocolate, you may need to spoon it over the ice cream sandwiches instead of dipping because regular chocolate is thicker than Magic Shell.

Make these fun treats in the summer when everyone wants some ice cream, but also other times of year. Just decorate them for each season.

We also love these simple treats as an alternative to cake at birthday parties. Decorate them in the birthday boy or girl’s favorite colors.
