How to Make Simple Cowboy Corn Dip

- Cook the bacon until crisp, then drain it on paper towels and crumble it. Save a little for topping the dip.
- Drain the corn well. Rinse and drain the black beans, then pat them dry if they still look wet.
- Add the softened cream cheese and mayonnaise to a large mixing bowl. Stir until smooth and well combined.
- Add the cheddar cheese, mozzarella cheese, parmesan cheese, jalapeño, red onion, and black pepper. Mix until the cheese and vegetables are evenly coated.
- Fold in the corn, black beans, and most of the crumbled bacon.

Why is My Dip Runny?
Excess liquid from the canned corn and beans is almost always the cause. Drain them well and press out any extra moisture with a paper towel before mixing.

- Freeze – I do not recommend freezing this dip. The cream cheese and mayonnaise can separate once thawed, and the vegetables can release extra liquid.

- 1/2 cup mayonnaise
