My Crockpot Breakfast Tater Tot Casserole is the recipe my family requests every holiday morning, and it’s easy enough to make any weekend. It’s loaded with crispy tater tots, breakfast sausage, eggs, and plenty of melted cheese, all cooked together in the slow cooker with barely any effort. Just layer, set it, and wake up to breakfast already done.

My family loves this casserole so much that we stopped saving it just for breakfast. It’s filling enough to serve any time of day, and with tater tots, sausage, eggs, and melted cheese all in one dish, nobody ever complains.

Making it is just as easy as eating it. Brown the sausage, add everything else to the crockpot, and walk away. A few hours later, breakfast, lunch, or dinner is done with almost no effort on your part.

Substitutions or Variations 

  • Want a Different Protein? I used ground breakfast pork sausage, but you can use, leftover ham, turkey sausage or any of your favorite cooked breakfast meats. You can even fry up several strips of bacon and crumble it into the casserole mixture.
  • Want to Add Veggies? Bell peppers (especially, orange, yellow or red bell pepper) and sauteed onions are great options. Or you can go all out with vegetables like mushrooms, broccoli, spinach, artichokes, roasted bell peppers, or sautéed sweet potatoes and butternut squash.
  • Want to Change the Cheese? Change up the cheese and use just about any melty cheese you prefer. Swiss, Colby gruyere, Monterey jack all work great in this recipe.
  • Can’t Find Tater Tots? Instead of the tater tots you can use the same amount of frozen hash browns.

How to Make Cheesy Tater Tot Breakfast Casserole

Cook the Sausage

  1. In a skillet brown the sausage over medium heat, breaking it up into small pieces with wooden spoon.
  2. Drain off the excess grease and the sausage set aside.
  3. Spray the inside of your slow cooker with nonstick cooking spray.
  4. In the bottom of your slow cooker place half the tater tots.
  5. Pour the cooked sausage of top of the tater tots.
  1. In a mixing bowl whisk together your eggs, milk, half-and-half, Cajun seasoning and half of each of the shredded cheese.
  2. Pour the egg mixture over the tater tot mixture.
  3. Add the remaining tater tots to the top of the casserole.
  4. Cover and cook on low for 4 hours.
  5. 30 minutes before serving top with the rest of the cheese and cover.

  • Add salt and pepper at the end – sometimes adding black pepper to the eggs can cause the eggs to have a weird color, so wait until serving to add it
  • Add the tots frozen – you don’t want them to become mushy once they cooked. If you are making this the night before, you can go ahead and add the ones to the egg mixture but keep the ones that are going on top of the casserole in the freezer until you are ready to cook it.
  • Use freshly grated cheese – pre-shredded cheese works fine, but it is coated with anti-clumping powder that can make it rubbery when it’s melted. Freshly shredded cheese melts so much smoother and gives the casserole a creamier texture.
  • Keep the measurements the same – this is a super versatile casserole that you can add or take away from. Just remember to keep the quantities the same. For instance, for every pound of sausage it calls for, you’ll use the same amount of ham or bacon, etc.

Can I Freeze Tater Tot Casserole?

You sure can. Just let casserole cool completely. Then, transfer it to a freezer safe baking dish. Wrap it with two layers of plastic wrap followed by a layer of foil and label it. Freeze for up to 2 months.

Storage Instructions

  • 1/2 cup milk
  • 1/2 cup half-and-half
  • 1/2 teaspoon cajun seasoning
  • 6 large eggs
  • 1 cup grated cheddar cheese
  • 1 cup grated pepper jack cheese
  • parsley for topping optional

Instructions

  • Pour the egg mixture over the tater tots/sausage.
  • Top with the remaining tatertots.

  • Cover and cook on low for 4 hours.
  • 30 minutes before serving top with the rest of the cheese and cover.
    1 cup grated cheddar cheese, 0.5 cup grated pepper jack cheese
  • Sprinkle with parsley and serve!
