Easy Chicken Fajita Wraps

Who doesn’t love a crispy lettuce wrap? This recipe takes ordinary wraps to a whole new level with mouth-watering flavors and textures of chicken fajitas. The combination of juicy, shredded rotisserie chicken, tender, sauteed peppers and onions and a cool and creamy homemade cilantro lime dressing make these wraps simply irresistible.

Whether you’re looking for a lighter version of your favorite fajitas for lunch or craving a way to spice up your weeknight dinners, this quick and tasty recipe for chicken fajita lettuce wraps pulls out all the stops. Ingredients:

For the Homemade Fajita Seasoning:

  • Chili powder
  • Smoked paprika
  • Onion powder
  • Garlic powder
  • Ground cumin
  • Cayenne pepper
  • Dried oregano
  • Sea salt

For the Creamy Cilantro-Lime Sauce:

  • Full-fat Greek yogurt (or sour cream)
  • Fajita seasoning
  • Fresh garlic clove, peeled and finely minced
  • Fresh cilantro, finely chopped
  • Fresh lime juice
  • Salt and black pepper, to taste

For the Chicken Fajitas:

  • Extra virgin olive oil
  • Red bell pepper, sliced thin
  • Green bell pepper, sliced thin
  • Yellow bell pepper, sliced thin
  • Orange bell pepper, sliced thin
  • Red onion, sliced thin
  • Balsamic vinegar
  • Salt and pepper, to taste
  • Rotisserie chicken, shredded
  • Homemade fajita seasoning
  • Chicken stock, preferably organic
  • Fresh cilantro, roughly chopped
  • Green onions, green parts only, sliced
  • Fresh lime juice
  • Romaine lettuce, washed and separated into individual leaves

How to Make the Best Chicken Fajita Wraps

Step One: Make the Seasoning

  • Mix up the fajita seasoning by combining all the spices in a small bowl and stirring until thoroughly blended.

This seasoning is delicious in other recipes so make an extra batch and store in an airtight container for later use. 

Step Two: Prepare the Dressing

  • For the cilantro-lime sauce, combine all ingredients in a medium glass or other non-reactive bowl.
  • Cover and place in the refrigerator until ready to use.

Step Three: Sauté the Veggies

Some of the ingredients for Chicken Fajita Wraps onion, and bell peppers. Other ingredients include chili powder, smoked paprika, onion powder, garlic powder, ground cumin, dried oregano and sea salt.
  • Heat the olive oil in a large nonstick skillet over medium high heat. Add the bell peppers, onion, and balsamic vinegar to the skillet and season with salt and pepper, to taste.
  • Cook for 10-12 minutes or until the onions and peppers are crisp tender.

Step Four: Heat the Chicken

  • Add the shredded rotisserie chicken, fajita seasoning, and chicken stock to the skillet and stir to combine.
  • Cook until heated through and excess liquid is gone, approximately 3-4 minutes. Season with additional salt or fajita seasoning, if desired.

Step Five: Assemble the Wraps

  • Remove your large skillet from heat and stir in the cilantro, green onions, and fresh lime juice.
  • To serve, spoon the chicken fajita filling onto individual Romaine lettuce leaves and top with a drizzle of cilantro-lime sauce. Enjoy!

Lettuce Wrap Variations:

Tortilla wraps: If you want to make traditional wraps, you can swap out the lettuce with tortillas. Just place flour tortillas on a flat surface with some of the filling in the middle and roll them up burrito-style.

Chicken-We used rotisserie chicken but if you prefer, you can use cooked and shredded boneless skinless chicken breasts.

Fajita bowl: This is one of our favorite ways of using up left over filling. Just add shredded lettuce in the bottom of a large bowl, add the meat and veggie mixture and then drizzle with some of the dressing.

Can I Make Chicken Wraps in Advance?

It’s best to assemble the wraps right before serving. But planning ahead with these few tips will save you even more time on those busy nights you want to get dinner on the table as quickly as possible. 

To get a jump, prepare the cilantro-lime sauce the night before so the flavors have a chance to thoroughly blend. Also, go ahead and prepare the fajita seasoning.

Then the next day all you have to do is make the filling and assemble the wraps.

Fajita Seasoning:

  • 3 Tablespoons chili powder
  • 1½ Tablespoons smoked paprika
  • 2 teaspoons onion powder

  • ½ small red onion sliced thin
  • 1 Tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 3 cups rotisserie chicken shredded
  • 2-3 Tablespoons homemade fajita seasoning
  • ¼ cup chicken stock preferably organic
  • ¼ cup fresh cilantro roughly chopped
  • 3 green onions green parts only, sliced
  • 2 Tablespoons fresh lime juice
  • 1 head Romaine lettuce washed, separated into individual leaves
