I’m always on the lookout for a soup recipe that is not only delicious, but fast as well. Because even though I’m not a picky eater, there are a few mouths in this house that are.
And what that means for me is that I have to think a bit harder about the soup recipes that I want to make. Thankfully I know that this fresh broccoli cheese soup is one that they’ll happily fill their bowls with!

Broccoli Cheese Soup
Is there anything better than a delicious creamy soup? And in my opinion, the more melted and shredded cheese, the better. What I enjoy about this soup is that it’s really quite easy to change up as well.
I tend to like to add in bigger pieces of broccoli because I really like the flavor that they add. (Although you can totally use smaller pieces – just depends on your preference.)
Ingredients Needed To Make This Broccoli Cheese Soup Recipe
- 1 whole onion, diced
- 1/2 cup butter + 1 tablespoon
- ¼ flour
- 3 cups of chicken broth
- 3 cups of half-and-half
- 3 cups chopped broccoli florets
- 2 large carrots, julienned (grated)
- ¼ teaspoon nutmeg
- 1 clove garlic, minced
- 3 cups of grated cheese (mild cheddar or sharp cheddar)
- Salt and pepper
How To Make Homemade Broccoli Cheese Soup
Saute onion and carrots in 1 tablespoon butter until onions are transparent. Scoop sauteed onions and carrots out and put them in a bowl for later.
Melt ½ cup butter and flour using whisk over medium heat for 3-5 minutes.
Add chicken broth and whisk to combine. Simmer (stirring occasionally) for 20 minutes.
Add broccoli, carrots and sauted onions and garlic. Add milk and half and half. Cook on low for 20 minutes. Do not let it boil, but stir often.
Add salt, pepper, and nutmeg.
Cook on low and add grated cheese. Stir until cheese is melted.
How can I thicken my broccoli cheese soup?
If you’re a fan of having a thick soup, there are ways that you can always make it thicker. One simple tip is to add in a tablespoon or two of flour plus the same amount of butter and add directly to the soup when you’re making it.
Cornstarch is also a good thickener as well. And if you’re not wanting to add either of those, you can always add in more of the broccoli or cheese and that will help to thicken this soup recipe, too.
What goes well with broccoli cheese soup?
So many good things! You can totally eat this soup entirely on its own but why not pair it up with other foods as well.
I’m a big fan of eating this with a bread bowl or even a delicious grilled cheese sandwich. (more cheese please, right?!)
Salads are also a super good choice because they’re like and compliment the hearty and rich flavor of the cheese and broccoli soup.
Why did my Broccoli Cheese Soup separate?
This is the worst when this happens! More than likely, you just cooked it on too high of a heat and it caused the ingredients to possibly curdle and create a texture that no one likes.
How long will Broccoli Cheese Soup last in the fridge?
This is important! If you have some soup leftover make certain that you store it in the fridge for later. But it’s also just as important to note that when you store it in the fridge, you need to eat those leftovers within 3 days of time.
Can u freeze broccoli cheese soup?
Yep, you sure can! If you can’t eat all the leftover soup in the three days of putting it in the fridge, store it in a freezer-safe container and put it in your freezer. This will keep it nice and ready for you to enjoy another time.
Just know that there is a chance that when it unthaws the texture and consistency might be a bit different but it still should be totally fine to eat.

I LOVE soup toppings! And even though this soup might not need a topping, it never hurts to try! Some simple soup toppings could be:
- MORE cheese
- Cilantro
- Fresh Jalapeño Slices
- Croutons
- Crackers/Crushed Crackers
- Sour Cream
And anything else that you want to add to your soup. You can even add some heat and spice to this simple soup recipe by adding on a few shakes of hot sauce or even mixing your soup bowl with some cayenne pepper, too!

Recipe says add half-and-half and milk, but the ingredients don’t list milk just half-and-half

Both of the recipe section list milk, but there is no mention of either section or the picture listing of milk. I’m in the middle of the recipe, I guess I’ll just wing it.

Sorry for the confusion. I’ve eliminated the word milk from the instructions. If the soup is too thick, you can add milk to the recipe, otherwise half and half and broth are fine.
