Ingredients

  • Miniature marshmallows, divided
  • Rice Krispies cereal, divided
  • Green gel food coloring (we used a mix of neon green and regular green)
  • Red and pink gel food coloring
  • Miniature chocolate chips

Instructions

Step One: Make the Green Layer

  • Spray a 10-inch springform pan or a 10-inch cake pan with non-stick cooking spray. Set aside.
  • Melt 1 tablespoon butter In a large saucepan over medium heat. Add 2 cups of miniature marshmallows and continue cooking, stirring constantly, until the marshmallows have melted.
  • Add several drops of green food coloring and 1-2 drops of neon green to the marshmallow mixture. Stir to incorporate the coloring into the melted marshmallows, until there are no streaks.

  • Remove from the heat and stir in 2 cups of Rice Krispies cereal.

Step Two: Add the Green Layer to the Pan

  • Drop large spoonfuls of the green Rice Krispie mixture around the outside of the prepared pan.
  • Press mixture evenly around the edge of the pan, pressing it up against the sides of the pan. This will make about a 1½ inch ring that will form your watermelon rind

Step Three: Make the Pink Layer

  • In another large pot, heat 2 tbsp of butter until melted. Add 4 cups of miniature marshmallows to the melted butter and heat, stirring constantly until melted.
  • Add several drops of red food coloring and 1-2 drops of pink, then stir until the color is evenly distributed and there are no streaks remaining.

  • Remove the marshmallow mixture from the heat and stir in 4 cups of Rice Krispies cereal.

Step Four:  Add the Pink Layer to the Pan

  • Press the pink Rice Krispies mixture into the middle of the green ring, making sure it fills the entire center of the pan and is smoothed out and pressed up against the green mixture.  
  • Allow the Rice Krispie mixture to set and cool completely to room temperature.
  • Before serving, press miniature chocolate chips into the pink section to make the watermelon seeds.
  • Cut the treats into slices and enjoy!

Tips and Suggestions

  • When pressing the cereal mixture into the pan, place a piece of wax paper or parchment over the mixture or spray hands with non-stick spray.
  • Don’t press down too hard on the treats, so they stay nice and chewy.
  • Save time by skipping the green layer and making an entire pan of pink Rice Krispie treats. You can then spread green frosting in a ring around the edge to make the watermelon rind.

Variations

  • Add some popsicle sticks to the middle of the green side of these treats to make Rice Krispie treat pops.
  • Make these treats watermelon flavored. Just stir in about ⅓ of a package of watermelon flavored Jello to the melted butter before adding the marshmallows for the green layer. Do the same for the pink layer with the remainder of the Jello mix.

How Do I Store Watermelon Rice Krispies Treats?

Store them in an airtight container in the refrigerator for up to five days. To keep them soft and chewy longer, you can wrap each treat individually with plastic wrap before placing it in the container.

Can I Freeze Them?

Yes, you can freeze them for up to three months. I’d recommend wrapping each treat individually in wax paper before placing it in a freezer bag so that they  don’t stick together.

  • Drop the green rice krispie mixture by large spoonfuls around the outside of the prepared pan.
  • Use a piece of parchment paper over your hands, or grease your hands with non-stick spray and press the green mixture evenly around the edge of the pan. This will make about 1 ½ inch ring pressed up against the sides.
  • In another large pot, heat 2 tbsp. of butter, until melted.
  • Add in 4 cups miniature marshmallows, and heat, stirring constantly, until melted.
  • Add several drops of red food coloring and 1-2 drops of pink, and stir to incorporate, until there are no streaks.
  • Remove from the heat and stir in 4 cups of rice krispie cereal.
  • Press the red Rice Krispies mixture into the middle of the green ring you made before, making sure to smooth out evenly and press the mixture up against the green ring so they come together.
  • Allow the Rice Krispies mixture to cool completely and set.
  • Before serving, press miniature chocolate chips into the red Krispie section to look like little watermelon seeds.
    1 Tablespoon miniature chocolate chips
  • Cut into triangles and serve.
