How to Make East Chinese Egg Fried Rice

- Next add the garlic and ginger. Stir and cook for an additional minute.

Why Should I Use Leftover Rice?
Leftover cold rice works best in this recipe because it doesn’t contain as much moisture as it does the same day it’s cooked. This helps to create fluffy, separated rice grains.
But if you forget to save your leftover rice, no worries. You can use freshly prepared rice by just spreading out a layer of the freshly cooked rice onto a large baking sheet and allow it to dry out for a couple of hours. This isn’t required but by using drier grains of rice the less clumpy your fried rice will be.
