This Apple Cider Bundt Cake is so delicious and easy to make. Using a hot apple cider glaze to soak into the cake as well as apple cider icing on top, it is a flavorful and decadent cozy cake for fall. Sure to be a crowd-pleaser, it’s perfect for a warming afternoon tea or dessert.
Apple Cider Doughnut Cake
You may know of this cake by another name, like Apple Cider Doughnut Cake, but whatever you call it there is no argument that it’s the perfect cake to curb your sweet tooth in the fall. While this is one of my favorite fall cake recipes, I also love Pumpkin Dump Cake and Carrot Cake Bread Loaf, full of those warm spices that make fall such a comforting time of year.
You’ll absolutely love this apple bundt cake if you like the apple-cider doughnuts available at the farmers’ market. This easy bundt cake is essentially a giant cakey doughnut baked in a Bundt pan. This dish is super handy when you need a fall dessert in a pinch as it’s made using only a box cake mix, a pudding mix and only a couple of other ingredients.

Ingredients
Cake
- 1 white cake mix (use a super moist cake mix like Betty Crocker)
- 3.4 oz. instant vanilla pudding mix
- 4 eggs
- ½ cup butter, melted
- 1 cup apple cider
Apple Cider Glaze
- ½ cup apple cider
- 3/4 cup powdered sugar
Icing
- 1 cup confectioner’s sugar
- 2 Tablespoons apple cider
Instructions
Step One: Prepare Oven and Pan, Combine Ingredients
- Preheat oven to 350°F. Spray the inside of a bundt pan with cooking spray and set it aside.
- In a medium bowl of an electric mixer or food processor, combine cake mix, vanilla pudding, and apple cider.
Step Two: Whisk Eggs and Add to Mixture
- In a small bowl whisk eggs together on a low speed. Slowly pour eggs into the cake flour mixture, a little at a time, so they don’t curdle.
Step Three: Pour Batter Into Bundt Pan and Bake
- Pour cake batter into a prepared bundt pan.
- Bake for 40 minutes or until a toothpick interested comes out clean. The top of the cake will be golden brown.
Step Four: Bake, Add Glaze and Cool
- While the cake is baking, make the glaze. In a small mixing bowl combine the apple cider and powdered sugar. Whisk to combine.
- As soon as the cake is out of the oven, while it’s still hot, pour on the apple cider glaze. Let sit for 30 minutes.
- Invert the cake onto a cake stand or cooling rack and let cool completely.
Step Five: Make Icing and Decorate
- Stir together the confectioner’s sugar and 2 tablespoons apple cider until smooth. Drizzle over the top of the cake.
- Slice and serve.
Suggestions and Alternatives
- Instead of icing, use a delicious cinnamon sugar coating to fully cover the cake.
- The best way to prevent your cake from sticking in the bundt pan is to thoroughly butter and flour the pan before adding the cake mix. You can use a pastry brush to get into all the cracks.
- Add toppings at the ideal temperature for the best results. To allow the glaze to sink into the cake while it is still hot, it must be poured over while it is still hot. Once the cake has cooled, you can then drizzle the icing on top.
- Substitute apple cider with unsweetened pure apple juice in a pinch.
- Add some homemade apple sauce or apple butter to the cake mixture for a more intense apple flavor.
- You can use a yellow cake mix or a spice cake mix instead of a white cake mix.

How To Store This Recipe
Countertop: This apple cider bundt cake may be kept for 3-5 days in an airtight container or covered in plastic wrap.
Freezer: Before coating with cinnamon sugar place in an airtight container and freeze for up to 2 months. Allow to defrost for 2 hours at room temperature, then brush with melted butter and sprinkle with cinnamon sugar before serving.

- Add toppings at the right temperature: The hot glaze is poured over to soak into the cake while the cake is also hot. Icing is then drizzled on top of the cake once it is cooled.
- While all ingredients for cakes should usually be at room temperature this recipe asks for chilled milk to help cool down the hot cider faster.
- To prevent your cake from sticking in the bundt pan, thoroughly butter and flour the pan before adding the cake mix. You can use a pastry brush to get into all the cracks.
