- popsicle mold (like this one)
Ingredients
- Root Beer
- Vanilla ice cream
How to Make Root Beer Popsicles
Step One: Prepare and Add the Vanilla Ice Cream
- Let the vanilla ice cream sit at room temperature until it becomes slightly melted.
- Fill each of the ice pop molds about ⅓ of the way full with the ice cream.
Step Two: Add the Root Beer
- Pour root beer into the remaining portion of each mold.
- Wait for the root beer foam to go down and then add a little bit more root beer until each mold is filled to the top.
- Insert the popsicle sticks.
- Freeze overnight and serve.
Tips and Suggestions
- To make it easier to remove the popsicles from the mold, you can run the bottom of the molds under warm water.
- If you don’t have popsicle molds, you can use a muffin tin, a large ice cube tray, or even a Dixie cup.
- Many popsicle molds have lids that will hold the sticks in place, but if yours don’t, you should allow your popsicles to harden slightly in the freezer before inserting the sticks. This will ensure that they stay upright.
Variations
- Use a different kind of soda in place of the root beer to create your own popsicle recipes. Orange soda, strawberry soda, or regular cola would all be delicious.
- Add some mix-ins to the ice cream section of the popsicle. You can use white chocolate chips or sprinkles. Or if you’re using a fruit-flavored soda, fresh fruit chunks would also work.
- Substitute cookies and cream, fudge swirl, or chocolate chip ice cream for the plain vanilla.
How Do I Store Root Beer Popsicles?
You can just keep your leftover popsicles in the mold and remove them as you’re ready to eat them. However, if they’ll be in your fridge for more than a few days, it’s best to remove them from the mold so they don’t get freezer burned or start to pick up any freezer smells.
After removing them from their mold, wrap each popsicle individually in plastic wrap and then store them in an airtight container. They should keep for 1-2 weeks.
Can I Make a Dairy-Free Version?
Sure – just substitute your favorite dairy-free ice cream for the regular vanilla ice cream.
