Hot Corn and Jalapeno Dip

I was recently trying to decide between making a hot corn dip or jalapeno poppers for a party, and this Creamy Jalapeno Corn Dip ended up being the best of both worlds. You get the sweet corn and creamy cheese people love in a warm dip, plus the fresh jalapeno flavor that makes poppers so hard to pass up.

What I like about this recipe is that it gives some of the same jalapeno popper flavors without stuffing peppers, wrapping anything in bacon, or standing over a tray of appetizers. Everything gets stirred together in one bowl, baked until hot and bubbly, and served with a pile of chips for scooping. Quick, easy, and completely addictive.

Why My Jalapeno Corn Dip Recipe is the Best

  • Perfect balance of sweet and spicy – Sweet corn softens the heat from the jalapenos. You get just enough heat without overpowering the dip.
  • Thicker, richer texture – I combine both cream cheese and sour cream so it bakes up thick and creamy but perfectly scoopable.
  • One bowl, one dish, no extra steps – There’s no stovetop step and no separate corn-roasting needed. Everything goes into one bowl, then into one baking dish, making cleanup a breeze.

Below is a list of the ingredients you’ll need to make this recipe. Scroll down to the full recipe card for the specific amounts.

  • Corn – The base of the dip, bringing natural sweetness that balances the jalapeno heat.
  • Cream cheese – Gives the dip its rich base and helps it hold together once baked.
  • Sour cream – Lightens the cream cheese so the texture doesn’t turn heavy.
  • Cheddar cheese – Gives the dip a melted, gooey texture.
  • Jalapenos, diced – Where the real heat and pepper flavor come from, fresh instead of pickled.
  • Chili powder – Adds a deeper, earthier heat that builds on the fresh jalapeno.
  • Garlic powder – Rounds out the seasoning so the dip doesn’t taste one-note.
  • Salt – Brings out the sweetness in the corn and the heat in the jalapeno.
  • Black pepper – Adds a mild, background heat that supports the jalapeno without competing with it.
  • Smoked paprika – Gives the dip a subtle smokiness that ties the seasoning together.

Substitutions or Variations

  • Out of cheddar? You can use Monterey Jack, Colby Jack, pepper jack, or a Mexican cheese blend.
  • Prefer more heat? Leave some jalapeno seeds in, add an extra jalapeno, or stir in a pinch of cayenne pepper.
  • Want it milder? Remove all seeds and ribs from the jalapenos, or use just two to three jalapenos instead of four.

  6. Serve immediately, while it’s hot.

  • Drain the corn – This prevents extra liquid from thinning out the dip as it bakes.
  • Dice the jalapenos small – This spreads the heat evenly so no one gets one overly spicy bite.
  • Taste the jalapenos first – Jalapenos can vary a lot in heat, so adjust the amount before stirring them in.
  • Use freshly shredded cheddar – It melts better and gives the dip a smoother, cheesier finish.
  • Let the dip rest before serving – A few minutes out of the oven helps it thicken slightly so it scoops better.

Hot Jalapeño Corn Dip FAQs

Can I Use Canned Corn For Jalapeno Corn Dip?

Canned corn works well. Just drain it very well before mixing it with the other ingredients.

Can I Make Jalapeno Corn Dip Ahead Of Time?

You can mix the dip, spread it into the baking dish, cover it, and refrigerate it until you’re ready to bake. Add a few extra minutes to the bake time if it goes into the oven cold.

Is Jalapeno Corn Dip Very Spicy?

It has a mild to medium heat, depending on your jalapenos. For less heat, remove the seeds and ribs. For more heat, leave some seeds in or add an extra jalapeno.

What Should I Serve With Jalapeno Corn Dip?

Tortilla chips are the classic choice, but corn chips, pita chips, crackers, and fresh vegetables all work well.

Can I Add Meat To Jalapeno Corn Dip?

Cooked crumbled bacon, diced cooked chicken, or browned sausage can be stirred in before baking. Bacon adds smoky flavor without overpowering the dip.

Storage Instructions

  • Refrigerate – Store leftover Jalapeno Corn Dip in an airtight container in the refrigerator for up to 3 days.
  • Freeze – I do not recommend freezing this dip. Cream cheese and sour cream can separate after thawing, which changes the texture.
  • Reheat – Reheat leftovers in the microwave in short intervals, stirring between each one. You can also warm it in a covered baking dish at 325° F until heated through.
