How to Make Easter Dirt Cups
Step One: Crush Cookies
- Pulse the Oreo cookies into fine crumbs with a food processor. (You don’t need to remove the cream filling). Set aside.
Step Two: Make the Pudding
- Whisk together the milk and pudding powder In a large bowl for 3-5 minutes, or until the pudding starts to thicken. You can also use an electric hand mixer or stand mixer with a paddle attachment on low speed.
- Gently fold the Cool Whip into the pudding.
- Divide the pudding in half and place each half in a separate medium bowl. Then add 2-3 drops of food coloring to one bowl, and another 2-3 drops of a different color to the other bowl. Fold to combine. Add more food coloring as needed until the desired color is reached.
Step Three: Color the Coconut
- Place the coconut shreds in a Ziploc bag along with 2-3 drops of green food coloring. Zip it shut and massage the contents until the coconut is green. Add more food coloring until the desired shade is reached.
Step Four: Assemble the Cups
- Add two tablespoons of Oreo cookie crumbs to the bottom of each dessert cup. Then add two tablespoons of the first color of pudding, followed by another layer of Oreo crumbs.
- Add the second layer of pudding in the other color, followed by one last Oreo layer.
- Top each cup with two tablespoons of the green coconut flakes, then add one Peep and 3 mini Cadbury eggs.
- Keep refrigerated until ready to serve.
Tips and Suggestions
- The food coloring is optional – you can also leave the pudding white or use a flavor that already has a pastel color, like pistachio or banana.
- If you do plan to color the pudding, choose a flavor that is white, such as cheesecake, white chocolate, coconut, or vanilla pudding.
- Use a piping bag to add the pudding layers to the cups. It will help you fill them quickly and neatly with no mess.
- If you don’t have a food processor, you can place the Oreos in a Ziploc bag and use a rolling pin to crush them.
Variations
- Use green sprinkles or green icing instead of coconut shreds for the top layer of the cups.
- Substitute any color or variety of peeps that you like.
- Use jelly beans in place of the Cadbury Eggs, or add some fresh fruit. Gummy worms would also be a fun addition.
You can also make an Easter dirt cake just like these smaller dirt cups.
How Do I Store Easter Dirt Cups?
You should keep these covered in plastic wrap and refrigerated until ready to serve, but they’re best eaten the same day they’re made, so I don’t recommend storing them. If they sit for too long, the Oreo crumbs will be mushy and the marshmallows will harden.
What if I Don’t Have Dessert Cups?
You can use 4-5 oz clear plastic cups instead, or even small juice glasses or mini mason jars. The 9 oz dessert cups are a pretty large serving size, so you may want to choose something smaller if you’re serving these for kids.
How Long Can I Leave These Out at Room Temperature?
Easter dessert cups are best served right out of the refrigerator. If you’ve put them out on a party dessert table, they should stay out for no longer than 2 hours.
