These Red, White & Blue Brownie Cookies are the perfect combination of a chewy brownie and a crispy cookie. This recipe makes super easy and delicious patriotic treats that are bursting with chocolate chips and crunchy candy in every single bite!

Patriotic Red White and Blue Cookies

One of the first things you’ll notice about these cookies is that they have the same delicious brownie crust with chewy centers as traditional fudge brownies have, but they are in fun individual cookie form.

I think they are a genius dessert idea because, they’re the perfect compromise when you are trying to satisfy the brownie fans and the cookie fans in your house! And by adding the red, white and blue candy, they become a super simple but mouthwatering sweet treat that will be a guaranteed crowd pleaser at your next patriotic party. 

One of the best things about these cookies is the dough is made with a brownie mix base. Brownie mix hacks make baking so easy. I used boxed brownie mix in these Chocolate Brownie Truffles and they are always the first to go at any party, and you can bet these brownie cookies will too!  

What’s Needed for these Patriotic Cookies

  • Boxed Brownie Mix (18.9 oz)
  • Eggs Butter-
  • Flour

How to Make Brownie Mix Cookie

Preheat oven to 375 line a baking sheet with parchment paper. 

Step One: Combine the Dry Ingredients

  • In a large mixing bowl combine brownie mix and flour.

Step Two: Add Wet Ingredients

A glass bowl contains cake mix, flour, two eggs, and oil—perfect for making red white and blue brownie cookies. Nearby are two cracked eggshells, a measuring cup, and a bowl of colorful candy-coated chocolates.
  • Add the eggs, water and the melted cup butter to the dry ingredients.

Step Three: Mix the Dough

  • Using a spoon, mix dough until just until well blended and there are no pockets of dry mix remaining. This dough will be thick.

Step Four: Add Candy

  • Fold in chocolate chips and ¾ cup of the M&Ms into the chocolate mixture until well mixed.

Step Five: Bake the Cookies

  • Scoop out cookie dough 1 tablespoon at a time, roll into a ball and place on prepared cookie sheet about 2 inches apart.
  • Bake 10-13 minutes or until the top is cracked and appears dry.
  • Remove from the oven and immediately press the extra M&Ms into the tops of the cookies.
  • Allow to cool on the baking sheet for about 3 minutes and then move to a cooling rack to cool completely.

Top Tips for Brownie Mix Cookies

  • Make sure you don’t overbake them. Remove them from the oven just when the edges are set and look crispy. They may appear slightly underdone, but they will continue to cook a little after you remove them from the oven.
  • Make sure you wait a few minutes before moving them to the wire rack for cooling. These cookies will be very delicate when they first come out of the oven so give them a few minutes to begin to set up, so they won’t crumble.
  • To get perfectly even cookies, using a cookie scoop is the way to measure out the dough. I used a medium-sized scoop for mine.
  • If you’re wanting to make the cookie dough in advance, just mix it up and cover the bowl tightly with plastic wrap. You can make the dough up to a couple of days ahead of time. 
  • If you end up overbaking your cookies and they are a little too crunchy for your preference, don’t throw them away! Crush them up and use them as a topping for your favorite ice cream or even chocolate mousse.

How to Store These Cookies

Once your cookies have cooled, store them in an airtight container at room temperature for a few days or in the fridge for up to a week.

You can also freeze these cookies. Just remember that air is not a friend of frozen food. So, if you want to freeze them just like you would a batch of brownies. 

Wrap the cookies well with a double layer of plastic wrap then stick them in a freezer for an extra layer of protection. They should stay fresh for up to about 3 months in the freezer when wrapped this way.

Brown Cookie Variations and Add-ins

Customize the colors: It’s super easy to make these into different themes just by changing the color of the M&Ms. Red and green for Christmas, Pink and Red for Valentine’s Day, Pastels for Easter or your favorite sports team colors for game day. They possibilities are endless!

Change the chips: You can use any kind of chocolate chips you prefer. Add dark chocolate, semi-sweet or even white chocolate chips or a combination!

Flavor options: If you like intense cocoa flavor, add just a little bit of espresso powder to the brownie batter.

Frost them: For super decadent cookies, you add cream cheese frosting to the cookies. You can add patriotic sprinkles to the top of the frosting instead of the M&Ms if you like.

Skip the M&Ms: If you want colorful cookies without adding the M & M candies, drizzle the tops of the cookies with melted festive red, white and blue candy melts instead. 

Add some crunch: Finely chopped pecans or crush toffee bits adds a nice little crunch to these cookies

Brownie batter: Box mix works wonderfully in this cookie recipe, but if you have a favorite brownie recipe, you can certainly use homemade.
