What is a Poke Cake?
Poke cakes are an easy way to make a rich and moist cake by poking holes in a baked sheet cake, then pouring pudding, cream, or Jell-o into the holes so they seep all the way down into the cake.
What’s in a Butterfinger Candy Bar?
Butterfinger candy bars are a crunchy layered peanut butter bar with a chocolate coating. They are crisp and delicious.
You can find a bag in the baking aisle of most grocery stores, or just buy the full-sized candy bars in the candy aisle by the checkout. You can also try a bag of Butterfinger baking bits if you can’t find the candy bars. We like the bigger chunks from the Candy bars, but the baking bits are a nice option.
I’ve always loved Butterfinger candy bars and used to crush them up and put them on vanilla ice cream for a special treat. This Butterfinger poke cake recipe is even better, but it would be great with a scoop of vanilla ice cream on the side!
Ingredients
- 1 box Devil’s food cake mix (plus ingredients on box)
- 10-15 mini Butterfingers, crushed (about ½ cup) – divided
- 16 oz. whipped topping like Cool Whip
- 1 jar of caramel sauce (like Smuckers ice cream topping)
- 1 can sweetened condensed milk
How to make a Butterfinger Poke Cake
- Preheat oven to 350
- Spray 9×13 pan with cooking spray, set aside.
- Make cake mix according to package directions and bake cake in pan. Let cake cool completely.
- Use the handle of a wooden spoon and poke holes in rows on the top of the cake.
- In small mixing bowl combine the caramel sauce and the sweetened condensed milk. Pour caramel over the top of the cake, making to sure it gets in the holes.
- This is the fun part: crush the Butterfinger bars into small pieces and sprinkle half of the Butterfinger pieces on top of the caramel filling mixture.
- Spread the Cool Whip on top like frosting.
- Sprinkle with remaining butterfingers.
How to Store the Cake?
Store in an airtight container in the refrigerator for a few days. Any longer and the syrup mixture will become runny.
Can You Make it Ahead?
We don’t recommend making this cake too far in advance. Because this cake is super moist, the sauce will run out of the bottom of the cake and be hard to serve if you make it a day or two ahead of time. The good news is that this entire cake can be made in about 30 minutes.
If you need to make ahead, bake the cake and cover it and refrigerate until you’re ready to serve. Then poke the holes and pour the caramel mixture, add the candy bar pieces, and top with Cool Whip. Baking the cake takes the longest, so this will save you some time if you bake it beforehand.
Alternatives and Suggestions
- Vanilla cake – we used a chocolate cake as the base, but you could use a yellow cake mix too.
- Smaller holes – if you like more of the caramel mixture to be throughout the cake, you can use a fork tines to poke holes in the cake intease of a wooden spoon.
- Chocolate chips – decorate with chocolate chips
- Chocolate syrup – drizzle chocolate syrup or hot fudge on top of the cake.
- Different candy bars – substitute different candy bars in place of the Butterfingers. You could try Heath bars, Twix, Reese’s, or your personal favorite.
This Butterfinger Delight Poke Cake is a decadent cake that’s perfect for a special occasion, family reunions, birthdays, or just an ordinary dessert night! it’s one of our family favorites! After one taste of the cake, you’ll be saying the same thing!
