Lemon Cake Mix – Any type of lemon cake mix will work perfectly for this simple cookie recipe.
Vegetable oil – The oil is an important ingredient as it keeps the cookies soft.
Eggs – The added eggs also give the cookies their moist texture and are a good binding agent, too.
Confectioners Sugar – Don’t forget the sugar! This added ingredient is what gives these lemon cake mix cookies their sweet taste!
How To Make Lemon Cake Mix Cookies
You’re going to love how fast and simple this cookie recipe is. They’ll be done and baked in no time at all.
- Preheat your oven to 350 degrees.
- Line a baking sheet with parchment paper.
- Put your mixer on a low speed and mix the boxed cake mix with vegetable oil, and eggs.
- Use a cookie scoop and put the cookie dough balls spaced out on the baking sheet.
- Totally optional but you can add in chocolate chips or nuts here if you want.
- Pop in the oven and bake for 8-10 minutes or until the top of the cookies start to crack or the edges start to turn brown.
- Once the time has passed, take the cookies out of the oven and put them on a rack to cool. Let rest in the pan for a few moments first though before you move them.
- Make the glaze at this time by using a whisk to mix the confectioners sugar and milk together.
- After the cookies have cooled, drizzle the glaze on top.
