Equipment

  • 1 6-8 quart crockpot

Ingredients

  • 3 large carrots peeled and cut into 3-inch pieces
  • 1 onion peeled and quartered
  • 1 teaspoon garlic minced
  • 3 sprigs fresh thyme
  • 3-4 pounds corned beef brisket with seasoning packet (or 1 Tbsp pickling spice)
  • 4 cups beef broth
  • 1 Tablespoon worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 small head green cabbage cut into wedges
  • 1 1/2 pounds yukon gold potatoes
  • 3 Tablespoons dijon mustard
  • 3 Tablespoons honey

Instructions

  • Place the carrots, onion, garlic, and thyme in the bottom of a 6-8 quart crockpot.

  • Set the brisket on top, fat side up, and sprinkle with the seasoning packet.
    3-4 pounds corned beef brisket
  • Add the broth, Worcestershire sauce, salt, and pepper.

  • Cover and cook on low for 8 hours.
  • After 5-6 hours, add the cabbage wedges and potatoes around the brisket. Cover and continue cooking until tender.
    1 small head green cabbage, 1 1/2 pounds yukon gold potatoes
  • If the potatoes are large, cut them in half for even cooking.
    Keeping the cabbage wedges intact helps them hold their shape during cooking.
  • In a small bowl, whisk together Dijon mustard and honey.

  • Slice the corned beef against the grain and serve with the vegetables and honey mustard.
