- To your crockpot, add the potatoes, onion, carrots, celery, beef broth, Italian seasoning, garlic, salt and pepper.
- Cook on low for about 3 hours. Potatoes should be fork tender.



- Before the last hour of cooking time, brown the ground beef in a large skillet.
- Drain the excess grease and add the 1/4 cup of flour. Cook for 1-2 minutes.
- Add the milk, and stir consistently, cooking a few minutes, until the mixture thickens. It will resemble a gravy.
- Add this mixture to the crockpot, and add the cheddar cheese.

- Cook 1 hour more, until cheese has melted and everything has melded together well.
