Ingredients

  • 4 large russet potatoes peeled and diced
  • 1/2 yellow onion chopped
  • 1 cup shredded carrots
  • 1/2 cup diced celery
  • 3 cups beef broth
  • 1 pound lean ground beef
  • 1 teaspoon Italian seasoning
  • 2 cloves of garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups shredded cheddar cheese
  • 1/4 cup flour
  • 1 cup milk

Instructions

  • To your crockpot, add potatoes, onion, carrots, celery, beef broth, Italian seasoning, garlic, salt and pepper.
    4 large russet potatoes, 1/2 yellow onion, 1 cup shredded carrots, 1/2 cup diced celery, 3 cups beef broth, 1 teaspoon Italian seasoning, 2 cloves of garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper
  • Cook on low for about 3 hours. Potatoes should be fork tender.
  • Before the last hour of cook time, brown the ground beef in a large skillet.

  • Drain the grease, and add the 1/4 cup of flour.

  • Cook for 1-2 minutes.
  • Add the milk, and stir consistently, cooking a few minutes, until the mixture thickens. It will resemble a gravy.

  • Add this mixture to the crockpot, and add the cheddar cheese.
    2 cups shredded cheddar cheese
  • Cook 1 hour more, until cheese has melted and everything has melded together well.
  • Top with your favorite toppings- we used extra cheese, bacon, and some sliced green onion.

Notes

Storage Instructions 

If you have leftovers, you can store them an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave.

How To Freeze Slow Cooker Cheeseburger Soup

I like to freeze leftovers in individual portions. Then when I am ready to enjoy a bowl, I just thaw in the fridge overnight before reheating. It will freeze well in a sealed, freezer-safe container for up to 3 months.
