To your crockpot, add potatoes, onion, carrots, celery, beef broth, Italian seasoning, garlic, salt and pepper.
4 large russet potatoes, 1/2 yellow onion, 1 cup shredded carrots, 1/2 cup diced celery, 3 cups beef broth, 1 teaspoon Italian seasoning, 2 cloves of garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper
Cook on low for about 3 hours. Potatoes should be fork tender.
Before the last hour of cook time, brown the ground beef in a large skillet.

Drain the grease, and add the 1/4 cup of flour.

Cook for 1-2 minutes.
Add the milk, and stir consistently, cooking a few minutes, until the mixture thickens. It will resemble a gravy.

Add this mixture to the crockpot, and add the cheddar cheese.
2 cups shredded cheddar cheese
Cook 1 hour more, until cheese has melted and everything has melded together well.
Top with your favorite toppings- we used extra cheese, bacon, and some sliced green onion.
