Christmas Tree Meringue Cookies
This is an easy recipe with basic ingredients you probably have at home. By using a low temperature the meringue batter retains the Christmas tree shape that you pipe onto a baking sheet. This recipe makes an airy cookie that is a special sweet treat.
Ingredients
- 4 room temperature egg whites
- 1 cup white sugar
- 1/8 tsp cream of tartar
- ½ tsp vanilla extract
- Green gel food coloring
- star shaped sprinkles
- sprinkles
Instructions
- Preheat the oven to 200, line a baking sheet with parchment paper.
- In the bowl of a stand mixer with a whisk attachment whip egg whites on high speed until white and foamy. You can also use an electric hand mixer.
- Add in cream of tartar and half of the sugar. Continue whipping until egg whites begin to thicken and soft peaks form.
- Add in the remaining sugar and vanilla and continue whipping on high several minutes until stiff peaks form.
- Add in a drop of green food coloring and mix until well incorporated. Add more food coloring if until desired color is reached.
- Place meringue mixture in a large piping bag fitted with a large star nozzle or closed star tip.
- Pipe onto the prepared baking tray in a circular motion to create small tree shapes. Top with gold stars to the top of the tree and add additional sprinkles or edible glitter to decorate the trees.
- Place in oven and bake for 2 hours. When finished baking shut off the oven and open it slightly, leave the meringues in the oven and let cool for one hour.
- Store in an airtight container.
Can I Make Meringue Without an Electric Mixer?
While, technically you can make meringue by hand (with a whisk), it will take longer and be quite a workout, because you have to really whip the egg whites and sugar.
How Will I Know the Meringues are Done?
When you can lift the Christmas tree off the wax paper, they are dry enough and ready to eat. Just touch them slightly before picking them up and see if they have hardened.
A Word of Caution
If you live in an area with high humidity (Florida, I’m talking to you!) you will need to monitor these more closely. It may take longer for them to set up properly.

What Type of Sugar Should I Use?
For this recipe we just used regular white granulated sugar, but you can also use a superfine sugar. A fine sugar will incorporate with the eggs faster.
Tips
- room temperature eggs – it’s best to start with room temperature eggs.
- clean bowl – make sure there is no water residue inside of your mixing bowl. I usually wipe down my bowl with a paper towel before making meringue to make sure there isn’t anything in the bowl that can interfere with the egg whites becoming meringue
- cream of tartar – don’t leave out the cream of tartar. This ingredient is key to making the eggs stiff.

- Store in an airtight container.
