So, imagine taking the fresh and tangy flavors of Italian bruschetta and combining them with savory baked succulent chicken breasts. That’s exactly what you’ll get with this amazing recipe!

🛒 What’s Needed to Make Easy Bruschetta Chicken Bake
Fresh Bruschetta Ingredients:
- Roma tomatoes or Campari tomatoes, chopped
- Red onion, diced
- Fresh basil, stems removed and chopped
- Garlic cloves, minced
- Mozzarella cheese, shredded
- Balsamic vinegar
Chicken Ingredients:
- Boneless skinless chicken breasts
- Onion powder
- Garlic powder
- Dried parsley
- Dried basil
- Salt
- Black pepper
- Avocado oil (or olive oil)
How to Make Baked Chicken Bruschetta
Preheat oven to 400 degrees F.
Step One: Make Tomato Topping
- In a medium bowl, add all the chopped fresh tomatoes and other bruschetta ingredients and stir to combine. Set aside.
Step Two: Sauté the Chicken
- In a small bowl, combine onion powder, garlic powder, dried parsley, dried basil, salt and pepper.
- Season both sides of the boneless chicken breasts.
- Heat one tablespoon of avocado oil in a cast iron skillet on medium-high heat. After the oil is hot, place chicken breasts in the skillet. Allow the chicken to cook for 2 minutes each side.
Step Three: Bake the Chicken
- Turn off the heat and place the skillet in the preheated oven for 15-20 minutes to finish the cooking process. Internal temperature of chicken should reach 165 degrees F when fully cooked.
Step Four: Rest the Chicken, Top and Serve
- Remove skillet from the oven and allow the juicy chicken breasts to rest for 5 minutes. Spoon on fresh tomato mixture over the top of the chicken and enjoy!
Easy Bruschetta Chicken Recipe Variations and Add-ins
- Cheese: If you love cheese as much as my family, you can add a thick slice of melted mozzarella cheese to the top of the chicken. Once the chicken cooks, remove it from the oven, add a thick slice of cheese and place it back in the oven just until the cheese is gooey and melted. You can also add a little parmesan cheese in with the tomatoes and herbs.
- Chicken: We used chicken breasts, but you can make this same recipe using boneless, skinless chicken thighs.
- Spices and Seasonings: You can use your favorite dried Italian seasoning blend. If you like dishes with a little heat, you can add a little bit of red pepper flakes to the tomato mixture.
- Balsamic Reduction: For a super tasty spin, leave out the balsamic vinegar when mixing up the topping ingredients. Instead, add the vinegar to a saucepan and over medium heat all it to cook until it becomes it reduces in volume by half and becomes balsamic glaze. Then just plate your chicken, top with the tomato mixture then drizzle the glaze over the top of the entire dish.
How To Store Baked Chicken Bruschetta
- To store leftover chicken: For leftovers, you’ll want to place them in an airtight container and place them in the fridge. I prefer to store the topping and the chicken separately. It will stay fresh for up to 3-4 days.
- Storing for when you make it in advance: You can make the tomato topping several days in advance and keep it chilled in the fridge. For the chicken, you can bake it the night before and keep it in the fridge. Then, reheat it and add the topping when ready to serve.
- For Freezing baked chicken bruschetta: You can freeze the chicken but freezing the bruschetta topping is not a good idea because the texture will change too much. The good news is you can make a fresh topping in just minutes.
How Do I Know When Chicken is Done?
The exact cook time can vary based on a couple of things. One, how big the chicken breasts are the other is how your oven cooks. The best bet it to check it with an instant read meat thermometer inserted in the thickest part of the chicken breast. According to the USDA, all poultry should reach a safe minimum internal temperature of 165 °F.

- ⅓ cup fresh basil, stems removed and chopped

- ½ cup mozzarella cheese shredded
- 2 Tablespoons balsamic vinegar

- 4 boneless skinless chicken breasts
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon dried parsley
- ½ teaspoon dried basil
- ½ teaspoons salt
- ¼ teaspoon pepper
- 1 tablespoon avocado oil
