Ingredients
- ½ cup uncooked white rice (not Minute Rice)
- ¼ cup butter
- 1 cup fresh mushrooms, sliced
- 1 small onion, chopped
- 1 can beef consume (not beef broth) – Campbell’s has a beef consume so make sure to find that at the store where you buy canned soup
Instructions
- Preheat oven to 350
- In 1-quart baking dish, add all ingredients except butter. Slice the butter into 1 tablespoon portions and place the pats of butter on top of the mixture.
- Bake for 50-60 minutes or until all liquid is absorbed.
Suggestions and Alternatives
- Use dry onion soup mix – If you’re not a huge fan of raw onions, using a soup mix might be a great choice. Just be careful and pay attention as this will up the sodium level in the recipe.
- Try different types of rice – Since you’re using uncooked rice in the recipe, try out different types. Jasmine rice can be a great choice or long grain rice as well. Uncooked brown rice and white rice are the most common.
- Unsalted Butter – Make sure that you use unsalted butter for this dish. If people want to add salt, they can do that to their own individual serving.

We don’t recommend making this recipe in a rice cooker. The rice needs the time in the oven so that it can fully incorporate the beef consume and butter into the rice. This won’t be accomplished properly in a rice cooker.
