The stick of butter adds a richness to the beef consume that’s absorbed into the rice as it cooks. Paired with mushrooms and a chopped onion, it’s a perfect side dish for any meal. It’s great for Thanksgiving and Christmas too.

This is my family’s favorite rice recipe. It dates back to my mother-in-law and I was always in awe when she made it. I finally got the recipe and learned how easy it is to make this delicious side dish. And, yes, it does actually use an entire stick of butter.

Use this flavorful rice recipe the next time you need a simple side dish or the perfect easy rice recipe to serve at all your potluck dinners. It’s such an easy way to make plain rice memorable.

You’re going to love this simple rice dish. Even though the name says “stick of butter”, this rice casserole actually doesn’t use a whole stick! Just 1/4 cup of butter (1/2 stick) is all you need to make this flavorful and delicious rice recipe.

There’s a reason why people ask me to make it and bring it with me to dinners. It’s because this simple dish has such a rich flavor that you will literally crave more of.

Stick of Butter Rice

With just 5 ingredients needed for this recipe, you just cannot pass it up. The uncooked rice soaks up the other ingredients and flavors perfectly as it bakes in the oven.

The flavor of this dish reminds me of the holidays which is why I tend to always have it on our Thanksgiving meal plan. It’s a great substitute for those that don’t care for stuffing, but still want a hearty side dish to pair with their turkey.

Whatever main course you serve with this, you’ll love how it perfectly pairs. I think this dish goes great with beef, cooked chicken breasts, and even a side dish of roasted vegetables, too.

Ingredients

Ingredients of Stick of Butter Rice on a white counter. These are the following: uncooked white rice, a cup of butter, a cup of fresh mushrooms (sliced), small onion, and a can of beef consume.
  • ½ cup uncooked white rice (not Minute Rice)
  • ¼ cup butter
  • 1 cup fresh mushrooms, sliced
  • 1 small onion, chopped
  • 1 can beef consume (not beef broth) – Campbell’s has a beef consume so make sure to find that at the store where you buy canned soup

Instructions

Step by step process of making Stick of Butter Rice.
  • Preheat oven to 350 
  • In 1-quart baking dish, add all ingredients except butter. Slice the butter into 1 tablespoon portions and place the pats of butter on top of the mixture.
  • Bake for 50-60 minutes or until all liquid is absorbed.

Suggestions and Alternatives

  • Use dry onion soup mix – If you’re not a huge fan of raw onions, using a soup mix might be a great choice. Just be careful and pay attention as this will up the sodium level in the recipe.
  • Try different types of rice – Since you’re using uncooked rice in the recipe, try out different types. Jasmine rice can be a great choice or long grain rice as well. Uncooked brown rice and white rice are the most common.
  • Unsalted Butter – Make sure that you use unsalted butter for this dish. If people want to add salt, they can do that to their own individual serving.

Can You Make this Rice Dish on the Stove Top?

Yes, you can make it on the stovetop, just set it on low and keep the dish covered.

What Does Adding Butter to Rice Do?

The added butter does a great job of creating the perfect texture for this dish. Butter will make the rice not sticky and create a wonderful taste and flavor.

How Do You Reheat Rice?

Since this makes a larger serving size, you might find you have some leftovers. All you have to do is reheat a small portion in the microwave to enjoy it again. You might want to add a tad bit more butter to reheat and store as it will help add a bit of moisture back to the rice.

What Do You Serve with Brown Rice with Mushrooms?

The flavor of this dish makes the perfect pairing for anything. This would be perfect for accompanying steak, beef roast, chicken, fish, or even as a meal with some protein on its own.. The mushrooms add a hearty flavor and texture that are quite filling.

Can You Add Condensed French Onion Soup as the Liquid?

I wouldn’t. I would stick to the ingredients listed as this is the best flavor for the recipe. You have to make sure that you’re using the best liquid for the rice as well so that it absorbs it properly and plumps up.

Can You Make This in a Rice Cooker?

We don’t recommend making this recipe in a rice cooker. The rice needs the time in the oven so that it can fully incorporate the beef consume and butter into the rice. This won’t be accomplished properly in a rice cooker.

This recipe is a great one to have ingredients on hand so you can make it at any time. It’s elegant enough to be a holiday favorite, and easy enough to be an everyday go-to dish. To keep it low maintenance I always keep the staples in my pantry so I can whip this up at any time.

It’s fast and simple to make and a great side dish recipe for any time of the year. Serve for the holidays and cut down on your baking time! This is our favorite rice side dish.
