I’ve been obsessed with Starbucks pumpkin bread for years, so I set out to make it at home. Every copycat recipe I tried was just good pumpkin bread. The texture was off, the flavor wasn’t quite right, and none of them had that signature density that still somehow stays perfectly moist. I tested this over and over until I finally got it: real pumpkin, warm spices, the pepita topping, and a texture that’s as close to the original as you can get without standing in line.

My Copycat Starbuck’s Pumpkin Loaf Bread

I’ve been ordering Starbucks pumpkin bread for years. It used to only show up in the fall, but it got so popular they started serving it year-round, and honestly, I order it all year long. There’s something about that perfectly spiced slice that I love. The texture is spot on: not dry, not too moist. It’s the kind of bread that holds together beautifully, but still melts in your mouth.

I made this so many times trying to nail the copycat version at home. I failed a lot. The secret that surprised me? Apple juice. It adds just enough sweetness and moisture to give the bread that signature Starbucks texture without making it heavy or greasy. Once I landed on this combination, I knew I had it. And, now, you do to!

Why My Recipe is the Best

  • Real canned pumpkin — a full 15-ounce can gives the bread genuine pumpkin flavor and keeps every slice perfectly moist from edge to center.
  • Apple juice instead of water — this is the trick that sets this recipe apart. It adds a subtle sweetness and keeps the crumb tender without making the bread greasy or dense.
  • Pepita topping — just like the original, a sprinkle of pepitas on top gives every slice that slightly crunchy, nutty finish that makes it feel like the real thing.

Ingredients to Make Starbucks Pumpkin Bread

Ingredients for Starbucks Pumpkin Bread include flour, baking soda, salt, pumpkin spice mix, sugar, brown sugar, vegetable oil, eggs, apple juice, canned pumpkin, pepitas or pumpkin seeds, arranged on a white surface with a plaid towel.

Below is a list of the ingredients you’ll need to make this recipe. Scroll down to the full recipe card for the specific amounts.

  • all-purpose flour — standard flour works great here; no need to sift.
  • baking soda — the leavening that gives the loaf its rise without making it too airy.
  • 1 tsp salt — balances the sweetness and brings out the spice flavor.
  • pumpkin spice mix — store-bought pumpkin spice works perfectly, or make your own with cinnamon, ginger, nutmeg, and cloves.
  • granulated sugar — the base sweetness for the loaf.
  • brown sugar — adds a subtle molasses depth that makes the flavor more complex.
  • vegetable oil — keeps the bread moist and gives it that tender crumb. Canola works too.
  • eggs — bind the batter and add structure.
  • apple juice — the secret ingredient! It adds moisture and a gentle sweetness that mimics the original perfectly.
  • pumpkin — use pure pumpkin puree, not pumpkin pie filling. Libby’s is my go-to.
  • pepitas or pumpkin seeds — for that signature Starbucks topping. Don’t skip these!

Substitutions or Variations

  • Don’t have apple juice? Orange juice is the closest substitute. Water will work in a pinch but you’ll lose a little of that signature sweetness.
  • No pumpkin spice mix? Make your own with 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg, and 1/4 tsp cloves.
  • Want to add chocolate? Fold in 1/2 cup of chocolate chips or chopped walnuts before pouring into the pan for a fun twist.

Here are my step-by-step instructions so you can make this recipe with ease. For the full, printable recipe with amounts and temperatures, scroll down to the recipe card below.

  1. Preheat the oven to 350° F. Grease a 9×5-inch loaf pan and line with a strip of parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin spice. Set aside.
  3. In a large bowl, whisk together the sugars, oil, eggs, apple juice, and pumpkin until smooth.
  1. Add dry ingredients to wet and stir until just combined. Do not overmix.
  2. Pour into the prepared pan and smooth the top. Sprinkle pepitas over the batter.
  3. Bake for 1 hour 20 minutes, or until a toothpick inserted in the center comes out clean.
  4. Cool completely in the pan before removing. Slice and serve.

  • Don’t overmix – Once you add the dry ingredients, stir just until the flour disappears. Overmixing develops gluten and leads to a dense, tough loaf.
  • Line your pan with parchment – It makes lifting the bread out completely foolproof and keeps the bottom from sticking.
  • Test before pulling it out – Every oven runs a little different. Start checking at the 1 hour 15 minute mark with a toothpick. If it comes out with wet batter, give it 5 more minutes.
  • Cool completely before slicing – I know it’s tempting, but cutting into it warm will give you a gummy texture. Let it cool fully for clean slices.

Starbucks Pumpkin Bread FAQs

Can I use pumpkin pie filling instead of canned pumpkin?

No, pumpkin pie filling already has sugar and spices added, which will throw off the balance of the recipe. Always use pure pumpkin puree.

Can I make these as muffins?

Yes, pour the batter into a lined muffin tin and bake at 350°F for 22 to 25 minutes. This recipe makes about 16 muffins.

Can I make this ahead of time?

Yes, this bread gets better the next day as the flavors deepen. Bake it the night before and store it wrapped at room temperature.

Storage Instructions

  • Refrigerate – Wrap the loaf tightly in plastic wrap or store slices in an airtight container in the fridge for up to one week.
  • Freeze – Wrap individual slices in plastic wrap and place in a zip-top freezer bag for up to 3 months. Thaw at room temperature or overnight in the fridge.
  • Reheat – Microwave a slice for 15 to 20 seconds until just warmed through.
