Tender Beef Tips and Gravy (No Peeking Beef Tips)

This classic dish creates a hearty meal of tender beef tips with rich mushroom gravy. What makes this recipe different from others is that there’s no more standing over the stove cooking them in small batches. Instead, the beef tips are covered in a super easy gravy then cooked slowly to perfection on a sheet pan in the oven. 

This recipe has a “no peeking” policy!  You cover the pan tightly with foil and let the oven do its job. The steam that builds up cooks the tips until they are so tender, they are literally falling apart in the gravy.  Once done, you can serve them over mashed potatoes, like this Instant Pot Mashed Potatoes, rice, or egg noodles.

  • Beef stew meat – this is sold already cut into bite-sized pieces
  • Cream of mushroom soup
  • Dry brown gravy mix – this comes in a packet
  • Onion soup mix packet

How to Make Beef Tips in the Oven 

Step One: Add Ingredients to a Sheet Pan

Combining all the ingredients in a pan before baking it is another step in preparing Beef Tips
  • Preheat your oven to 300 degrees.
  • In a 9×13 baking dish (or a Dutch oven) add the pieces of beef. Mix together a can of cream of mushroom soup, a can of water, one of the gravy packets, and the onion soup mix. Pour over the meat.
  • Stir everything together and cover tightly with foil. 

Step Two: Place in Oven

  • Place in the preheated oven and cook for 3 hours or until the tips are fork tender.

Step Three: Thicken the Gravy

Suggestions and Alternatives

  • Beef broth: For a more intense beef flavor you can use beef broth instead of water when making the gravy.
  • Canned soup: We love mushroom soup with this recipe, but you can use cream of celery if you prefer. You can also use golden cream of mushroom soup.
  • Worcestershire sauce or soy sauce: Just a dash of either of these sauces can add another delicious level of flavor.
  • Sauteed onions: Add thinly sliced onion to the gravy and beef mixture. They will cook down and become soft and tender.
  • Tomatoes: Add a drained can of diced tomatoes or tomato paste for a touch of acidity and sweetness.

Can I Make This Recipe Stove Top?

Sure! Though it does require a little bit of hand-on attention. Just assemble the ingredients in a cast iron skillet with a lid or Dutch oven. Cover the skillet or pot and let the mixture simmer gently for about an hour over medium or medium-high heat. You will need to stir it occasionally but leave the lid on as much as possible.

​Can I Make This Recipe as Slow Cooker Beef Tips?

Absolutely, though the cooking time will take longer! Follow the same instructions as you do for the oven method, except for doing so in your crock pot. Set the cooker on the low setting and allow it to cook for 6-8 hours or until the tips are tender.

What Cut of Beef Makes the Best Beef Tips?

We used beef stew meat already packaged at the grocery store. For different cuts of meat, you can use sirloin steak tips, diced beef brisket, rump roast or chuck roast. The good news is that the beef cubes cook low and slow for several hours. This means you can use what’s on sale even if it’s a tougher cut of meat. Once they finish cooking in the rich brown gravy, you’ll have mouth-watering tender chunks of beef.

  • 1.74 ounce envelopes brown gravy mix 2 envelopes
  • 1.9 ounce dry onion soup mix 1 packet
  • 1 can of water

Instructions

  • Preheat your oven to 300 degrees.
  • In a 9×13 baking dish add your beef, cream of mushroom soup, 1 packet of brown gravy mix and the onion soup mix.
