This apple breakfast casserole is a quick and easy way to make a gourmet breakfast for a group or your family. It’s perfect for a weekend family breakfast or a holiday brunch. This breakfast casserole is a family favorite and is really easy to make.
Apple Breakfast Casserole
I love one dish breakfast recipes. Feeding breakfast to a group or even to your family is usually last on the list of meals to prepare, but it’s an essential meal none the less.
I love how the apple slices look on the top of the casserole so you know what’s inside. You could slip some in a second layer between the batter, but for this version I just put the apples on top.
This is a moist and fluffy breakfast casserole. The apple breakfast casserole uses yogurt to keep it super moist.
And the brown sugar give is a great flavor.
Not to mention the spices.
The recipe calls for ginger and I know that’s an ingredient that’s not always on hand, however I’d try to make this with the ginger. It’s such a unique flavor that it’s hard to replace.
While I haven’t made this recipe ahead of time, I think it would do well if you made it the night before and refrigerated it, then baked it in the morning. I love breakfast casseroles that I can make the night before to save time.

Apple Breakfast Casserole
Ingredients
- 1 Tsp cinnamon
- ½ Tsp nutmeg
- ½ Tsp grated ginger
- ¼ Tsp black pepper
- ½ Cup butter
- 2 Tsp baking powder
- 1 ¾ Cup flour
- ¼ Cup oat flour
- 1 Cup brown sugar
- 2 Eggs
- 1 Cup yogurt
- 1 Tsp vanilla extract
- 1 Apple thinly sliced
Instructions
- Preheat the oven to 350 degrees. Grease and flour a pan. Set aside for later.
- In a bowl combine the spices, baking powder, flour, oat flour and brown sugar. Set aside
- In another bowl mix the butter with the eggs, yogurt and vanilla extract.
- Pour the wet ingredients into the dry ingredients and incorporate with the help of a rubber spatula. Pour the batter into the prepared pan. Decorate with the apple slices and take to the oven. Bake for 35 to 40 minutes or until done.

1/4 tsp of black pepper is that right? Never heard of eating apples with black pepper. Just asking don’t want to waste all my ingredients if it’s not right. But I would love to try making this. Oh and what are the nutrition value.
