Ingredients For 7UP Pound Cake

For the Cake
- Butter – You’ll want to use unsalted butter for this recipe.
- Granulated sugar – Sweetens the batter.
- Lemon extract – Gives the cake an extra lemony flavor.
- Eggs- To help the cake rise, make sure to set them out and let them come to room temperature.
- Flour- We used all purpose flour that we sifted.
- 7UP® – Key ingredient that makes it a 7UP cake.
For the Glaze:
- Confectioners sugar – Sift it or use a fork to break up any clumps.
- Vanilla extract – Gives the glaze a warm flavor.
- Lemon juice – Brightens up the glaze and gives it extra tang.
- 7UP® – Adds extra flavor and sweetness to the glaze.
How to Make a Moist 7up Cake
Step One: Combine the Wet Ingredients


- Preheat oven to 315° degrees.
- Spray bundt pan with non-stick cooking spray and set aside.
- In the bowl of a stand mixer with the paddle attachment or in a medium-sized bowl with an electric mixer, beat the sugar and butter on medium speed until creamy.
- Add in lemon extract and mix.
- Add in eggs and mix.
Step Two: Add the Wet Ingredients and Soda
- Add in flour, one cup at a time and mix to combine.
- Pour in the lemon-lime soda and mix for 1 minute. Scrape down the sides of the bowl until the dry ingredients are well incorporated.
- Mix for another minute on low speed.
Step Three: Bake the Cake


- Pour the cake batter into your prepared Bundt pan.
- Bake in the preheated oven for 1 hour and 15 minutes to 1 hour and 25 minutes, or until a toothpick comes out clean when inserted in the center of the cake.
Step Four: Make the Glaze

- In a medium bowl, mix together the powdered sugar, vanilla, lemon juice, and 7UP.
- Remove the 7UP cake from the oven and let cool in the bundt pan for 10 minutes, then invert onto a serving plate and remove the pan.
Step Five: Glaze and Serve

- Let the cake cool completely. Then, using a spoon, drizzle the glaze over the cooled cake.
How to Make a Moist 7up Cake
Mix the pound cake ingredients — sugar, butter, eggs, flour — with the 7UP soda. The soda adds a light, citrusy flavor and keeps the cake incredibly moist and fluffy. Also, be to not overbake the cake. Insert a toothpick into the center until it comes out clean.
7Up Pound Cake Recipe Tips
- To ensure your pound cake bakes evenly, position the oven rack in the center of the oven. This helps distribute heat evenly around the cake, which prevents it from becoming too brown on the top or sides.
- Though not required, for added flavor and moisture, consider brushing the cooled cake with a simple syrup infused with lemon or lime juice. This step not only adds more citrus flavor but also keeps the cake moist for longer.
- Again, it’s not required, but I recommend sifting the dry ingredients together before adding them to the wet ingredients. This helps remove any lumps and ensures you have a smooth batter.
- To prevent the cake from sticking to the pan, grease and flour the pan really well, paying extra attention to the crevices if using a Bundt pan. You can use a non-stick baking spray that has flour in it to make it easier.
- For a decorative touch, garnish the glazed cake with additional lemon or lime zest just before serving. This adds a pop of color.
Variations and Add-ins
- Soda – If 7Up isn’t your thing or if you’re fresh out, feel free to substitute it with any lemon-lime soda of your choice. Sprite or Sierra Mist are other good choices.
- Glaze – For a thicker, richer lemon-lime glaze, increase the amount of confectioners’ sugar until it’s the thickness you prefer.

- 3 cups sugar
- 2 Tablespoon lemon extract
- 5 eggs room temperature
- 3 cups all-purpose flour
- 3/4 cup 7UP
Glaze:
- 2 cups confectioners sugar
- 1/2 teaspoon vanilla extract
- 1½ Tablespoons lemon juice
- 2 Tablespoons cold 7UP
Instructions
- Preheat oven to 315° degrees.
- Spray bundt pan with non-stick cooking spray and set aside.
- In medium-sized mixing bowl, using a stand mixer or electric hand mixer, beat the sugar and butter until creamy.1½ cups unsalted butter, 3 cups sugar

- Pour batter into a Bundt pan.
- Bake for 1 hour 15 minutes to 1 hour 25 minutes (75-95 minutes)
For the Glaze:
- In medium bowl mix together the confectioners sugar, vanilla, lemon juice and 7UP.2 cups confectioners sugar, 1/2 teaspoon vanilla extract, 1½ Tablespoons lemon juice, 2 Tablespoons cold 7UP
- Remove cake from oven and let cool in the bundt pan for 10 minutes then invert onto a plate and remove pan.
- Let cool completely then drizzle with the glaze.
