7up Cake Recipe (7UP Pound Cake)
Pound cakes can be daunting to make at home, but my 7Up Cake is easy and delicious. It combines subtle lemon-lime flavors with the buttery flavor of a traditional pound cake. I've made sure it's a moist and tender cake with a zesty glaze that's perfect for any occasion.

Cake
- 1½ cups unsalted butter
- 3 cups sugar
- 2 Tablespoon lemon extract
- 5 eggs room temperature
- 3 cups all-purpose flour
- 3/4 cup 7UP
Glaze:
- 2 cups confectioners sugar
- 1/2 teaspoon vanilla extract
- 1½ Tablespoons lemon juice
- 2 Tablespoons cold 7UP
Preheat oven to 315° degrees.
Spray bundt pan with non-stick cooking spray and set aside.
In medium-sized mixing bowl, using a stand mixer or electric hand mixer, beat the sugar and butter until creamy.
1½ cups unsalted butter, 3 cups sugar
Add in lemon extract and mix.

Add in eggs and mix.
5 eggs
Add in flour, one cup at at time and mix to combine.
3 cups all-purpose flour
Pour in 7UP® and mix for 1 minute.
3/4 cup 7UP
Scrape down the sides of the bowl.
Mix for another minute on low speed.
Pour batter into a Bundt pan.
Bake for 1 hour 15 minutes to 1 hour 25 minutes (75-95 minutes)
For the Glaze:
In medium bowl mix together the confectioners sugar, vanilla, lemon juice and 7UP.
2 cups confectioners sugar, 1/2 teaspoon vanilla extract, 1½ Tablespoons lemon juice, 2 Tablespoons cold 7UP
Remove cake from oven and let cool in the bundt pan for 10 minutes then invert onto a plate and remove pan.
Let cool completely then drizzle with the glaze.
