Peach season is one of the best parts of summer, but figuring out how to peel, store, and freeze them can be tricky. With the technique I use,  peeling peaches is simple, storing them is easy, and freezing them means you’ll have summer sweet peaches on hand all year long.

Whether you want to bake a cobbler, whip up a batch of jam, or stash a few bags in the freezer for smoothies, these steps will show you how to handle peaches from start to finish. Once you try this method, you’ll never go back to struggling with stubborn skins or wasting fruit again.

How to Peel Peaches (Blanch and Peel Method)

Blanching is the easiest way to remove peach skins while keeping the fruit intact.

Step-by-Step Instructions:

  • Bring a large pot of water to a boil.
  • Use a sharp knife to cut a small “X” or criss-cross on the bottom of each peach.
  • Carefully place the peaches into the boiling water for 30-60 seconds.
  • Transfer immediately to an ice bath (a large bowl filled with ice water).
  • Once cooled, gently rub the skin with your fingers, it should slide right off.

This works best with ripe peaches. If they’re still too firm, give them another day or two on the counter.

How to Store Fresh Peaches

Not ready to freeze just yet? Here’s how to store peaches depending on their ripeness:

  • Unripe peaches – Leave them on the counter at room temperature until they soften. For faster ripening, place them in a paper bag.
  • Ripe peaches (short-term) – Once ripe, store them in the refrigerator to slow down spoiling. They’ll keep for about 3-5 days.
  • Cut peaches – Store peeled and sliced peaches in an airtight container in the fridge. To prevent browning, toss them with a little lemon juice. Use within 2-3 days.

Freezing peaches is the best way to enjoy that summer flavor all year long. You can freeze them as slices (best for baking and smoothies) or whole (handy for later peeling and cooking).
