Preheat oven to 375° F. Lightly grease a 9 x 13-inch casserole dish.
In a bowl, combine the crushed Ritz crackers with melted butter. Set aside.

In a large bowl, mix cream cheese, heavy cream, chicken stock, Dijon mustard, onion powder, black pepper, and cheddar until smooth.

Add the shredded chicken and stir until fully combined.

Transfer the mixture to the prepared dish and top with the buttered crackers.
Cover loosely with foil and bake for 45 minutes, until bubbling.
Covering with foil prevents the crackers from over-browning.
Remove the foil and bake a few more minutes if needed to brown the topping.
Garnish with parsley and serve.
