Preheat oven to 400
Line baking sheet with parchment paper or aluminum foil (or our favorite, a silpat liner). Spray parchment or aluminum with cooking spray.
Line parchment with a single layer of saltine crackers, sides touching, to cover entire bottom of baking sheet. You might need to break a few to get them to fill the spaces.
1 sleeve of saltine crackers (about 40 crackers)
In a medium-sized sauce pan, melt butter and brown sugar over medium heat until bubbly. Stir with a whisk and let boil on medium for 3 minutes.
1 cup salted butter , 1 cup brown sugar, packed
Pour the butter mixture directly onto the saltine crackers in the baking sheet. Spread over the top of all the crackers with a spatula or the back of a spoon.
Bake for 5 minutes.
Remove from oven and immediately sprinkle chocolate chips over the top of the crackers. Let sit for a 1 minute for the chocolate chips to start melting. Take a spatula or the back of a spoon and spread the melted chocolate over the toffee layer.
2 cups semi-sweet chocolate chips
Sprinkle with holiday sprinkles and allow to cool.
Red and green sprinkles
Once cool, break into pieces.
Store in an air tight container.
