Chocolate Gingersnap Cookies

Ingredients

  • 1 cup brown sugar
  • 3/4 cup unsalted butter melted
  • 1 large egg
  • 1/3 cup molasses
  • 2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup cocoa powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground cloves
  • 3/4 cup chocolate chips mini
  • 1/4 cup sugar for coating

Instructions

  • In a large mixing bowl or electric mixer, combine brown sugar, melted butter, egg, vanilla, and molasses. Whisk until smooth.

  • Next, sift the cocoa powder and add the other dry ingredients. Stir to combine.

  • Mix in the dry ingredients into the wet ingredients and mix until combined.
  • Add the mini chocolate chips and gently fold them in the cookie dough.

  • Cover the cookie dough with plastic wrap and place in the refrigerator for at least one hour. Sprinkle with sugar for coating.
