Pat the steak cubes dry with paper towels. This helps them brown instead of steam.
1 ½ pounds top sirloin steak
Place steak in a mixing bowl. Drizzle with olive oil and toss to coat.
1 Tablespoon olive oil
Sprinkle with salt, pepper, garlic powder, and smoked paprika. Toss again so every piece is evenly seasoned.
1 teaspoon kosher salt, ½ teaspoon black pepper, 1 teaspoon garlic powder, ½ teaspoon smoked paprika
Preheat the air fryer to 400 degrees. Place steak bites in a single layer in the basket. Do not overcrowd. Cook in batches if needed.
Air fry for 4 to 5 minutes, shake the basket, then cook another 3 to 5 minutes depending on desired doneness.
For medium rare, aim for about 130 to 135 degrees internal temperature. For medium, cook to about 140 to 145 degrees.
While the steak cooks, melt butter in a small skillet over low heat. Add minced garlic and cook for about 30 seconds, just until fragrant. Do not brown the garlic.
3 Tablespoons butter, 2 cloves garlic
Transfer hot steak bites to a bowl. Pour garlic butter over the top and toss to coat.
Sprinkle with fresh parsley if desired and serve immediately.
1 Tablespoon chopped fresh parsley
