Ingredients

  • 1 ½ pounds top sirloin steak cut into 1 inch cubes
  • 1 Tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 3 Tablespoons butter
  • 2 cloves garlic minced
  • 1 Tablespoon chopped fresh parsley optional

Instructions

  • Pat the steak cubes dry with paper towels. This helps them brown instead of steam.

  • Place steak in a mixing bowl. Drizzle with olive oil and toss to coat.

  • Sprinkle with salt, pepper, garlic powder, and smoked paprika. Toss again so every piece is evenly seasoned.

  • Preheat the air fryer to 400 degrees. Place steak bites in a single layer in the basket. Do not overcrowd. Cook in batches if needed.
  • Air fry for 4 to 5 minutes, shake the basket, then cook another 3 to 5 minutes depending on desired doneness.
  • For medium rare, aim for about 130 to 135 degrees internal temperature. For medium, cook to about 140 to 145 degrees.
  • While the steak cooks, melt butter in a small skillet over low heat. Add minced garlic and cook for about 30 seconds, just until fragrant. Do not brown the garlic.

  • Transfer hot steak bites to a bowl. Pour garlic butter over the top and toss to coat.
  • Sprinkle with fresh parsley if desired and serve immediately.

  • Preheat first: Always preheat the air fryer for better browning.
