- 1 pound ground beef
- 2 large onions sliced
- 1 large green bell pepper chopped
- 16 ounce can diced tomatoes
- 1/2 cup uncooked long grain white rice
- 2 teaspoons salt
- 1 to 2 teaspoons chili powder
- 1/8 teaspoon black pepper
- 1 to 1 1/2 cups shredded cheddar cheese optional
Preheat oven to 375° F.
Warm a cast iron skillet, or any oven safe skillet, over medium heat. Cook the ground beef with the sliced onions and chopped green pepper until the beef is browned and the vegetables are tender. Drain any excess fat.

Stir in the tomatoes (with juice), uncooked rice, salt, chili powder, and pepper. Heat until everything is warmed through.
16 ounce can diced tomatoes, 1/2 cup uncooked long grain white rice, 2 teaspoons salt, 1 to 2 teaspoons chili powder, 1/8 teaspoon black pepper
Cover the skillet tightly with a lid or foil and transfer it to the oven. Bake for 35 to 45 minutes, or until the rice is tender.
(optional) Uncover and sprinkle the shredded cheddar over the top. Return to the oven for 10 to 15 minutes, or until the cheese is melted. Serve warm.
