Ingredients

  • 1 pound lean ground beef
  • ½ cup onion chopped
  • 1 ounce taco seasoning
  • 4 ounces green chilies 1 small can, drained
  • 1 ¼ cup milk
  • ¾ cup Bisquick
  • 3 eggs
  • 1 cup monterey jack cheese shredded (hand shred)
  • 1 medium tomato diced

Instructions

  • Preheat oven to 400° F
  • Spray a 10-inch pie plate with cooking spray and set aside.
  • In medium frying pan, brown ground beef with the chopped onion until brown. Drain.

  • Stir in taco seasoning.

  • Spread beef mixture into the bottom of the pie plate.
  • Top with green chiles
    4 ounces green chilies
  • In small mixing bowl stir together eggs, milk, and Bisquick.
    1 ¼ cup milk, 3 eggs, ¾ cup Bisquick
  • Pour over beef and chiles.
  • Bake for 25 minutes.
  • Top with tomatoes and sprinkle with cheese.
    1 medium tomato, 1 cup monterey jack cheese
  • Bake another 10 minutes, or until cheese is melted.
  • Serve with sour cream and salsa, garnish with shredded lettuce and diced tomatoes
