Preheat oven to 400° F
Spray a 10-inch pie plate with cooking spray and set aside.
In medium frying pan, brown ground beef with the chopped onion until brown. Drain.
1 pound lean ground beef, ½ cup onion
Stir in taco seasoning.

Spread beef mixture into the bottom of the pie plate.
Top with green chiles
4 ounces green chilies
In small mixing bowl stir together eggs, milk, and Bisquick.
1 ¼ cup milk, 3 eggs, ¾ cup Bisquick
Pour over beef and chiles.
Bake for 25 minutes.
Top with tomatoes and sprinkle with cheese.
1 medium tomato, 1 cup monterey jack cheese
Bake another 10 minutes, or until cheese is melted.
Serve with sour cream and salsa, garnish with shredded lettuce and diced tomatoes
