- 1 small onion diced
- 2 cloves garlic minced
- 1 carrot chopped
- 1 large celery stalk chopped
- 1 zucchini cubed
- 2 teaspoons dried basil
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 32 oz can diced tomatoes
- 2 tablespoons tomato paste
- 2 bay leaves
- 4 cups low sodium vegetable broth
- 1 can of red kidney beans
- 1 can of cannellini beans
- 1 1/2 cups dried small shell pasta
- Salt & pepper to taste
In your slow cooker, combine all of the ingredients except for the pasta.
Cover and cook on low for 6 - 8 hours or high for 3 - 4 hours.
10 minutes before serving, bring a large pot of water to boil and add pasta. Cook the pasta for 8 - 10 minutes, until cooked through.
Drain the pasta and stir it into the slow cooker. Serve.
