Ingredients

  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 carrot chopped
  • 1 large celery stalk chopped
  • 1 zucchini cubed
  • 2 teaspoons dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 32 oz can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 4 cups low sodium vegetable broth
  • 1 can of red kidney beans
  • 1 can of cannellini beans
  • 1 1/2 cups dried small shell pasta
  • Salt & pepper to taste

Instructions

  • In your slow cooker, combine all of the ingredients except for the pasta.
  • Cover and cook on low for 6 - 8 hours or high for 3 - 4 hours.
  • 10 minutes before serving, bring a large pot of water to boil and add pasta. Cook the pasta for 8 - 10 minutes, until cooked through.
  • Drain the pasta and stir it into the slow cooker. Serve.
