Ingredients

  • 1 cup salted butter softened
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 2-3 drops pink gel food coloring
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ cup drained & chopped maraschino cherries
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350º F.
  • Line a baking sheet with parchment paper and set aside.
  • Using a stand mixer, or a medium-size mixing bowl with a handheld mixer, beat the butter on medium-high speed until smooth, about 1 minute.

  • Add sugars, and mix for 1-2 minutes, or until light and fluffy.

  • Add egg, vanilla, and almond extract. Mix until combined.

  • Add in 2-3 drops of pink gel food coloring and mix.

  • In a separate small bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet ingredients until fully incorporated.

  • Fold in chopped maraschino cherries and chocolate chips.
    ¾ cup drained & chopped maraschino cherries, 1 ½ cups semi-sweet chocolate chips
  • Use a 1-tablespoon cookie scoop to drop dough balls onto the baking sheet.
  • Bake for 12-15 minutes, until the edges are just golden brown.
  • Allow cookies to cool for 5 minutes before transferring to a cooling rack. Cool completely and enjoy.
