Ingredients

  • 1 sheet frozen puff pastry thawed
  • 8 ounces wheel Brie cheese rind left on
  • ½ cup whole berry cranberry sauce
  • 1 large egg beaten
  • 2 Tablespoons chopped pecans
  • 1 Tablespoon finely chopped fresh rosemary
  • flaky sea salt optional

Instructions

  • Preheat the oven to 400° F. Lightly grease a 24-cup mini muffin pan.
  • On a lightly floured surface, unfold the puff pastry and roll it slightly to smooth the seams.
    1 sheet frozen puff pastry
  • Keep the puff pastry cold until you're ready to work with it. It puffs better.
  • Cut into 24 equal squares. Press one square into each muffin cup.
  • Cut the Brie into 24 small cubes and place one cube into each pastry cup.
    8 ounces wheel Brie cheese
  • A serrated knife makes cutting Brie much easier.
  • Spoon about 1 teaspoon cranberry sauce over each piece of Brie.
½ cup whole berry cranberry sauce
  • Don't overfill with cranberry sauce or it can bubble over.
  • Sprinkle with chopped pecans and rosemary.
2 Tablespoons chopped pecans, 1 Tablespoon finely chopped fresh rosemary
  • Brush the exposed edges of the puff pastry with beaten egg.
    1 large egg
  • Bake for 16 to 18 minutes, or until the pastry is puffed and deep golden brown.
  • Let cool for about 5 minutes before removing from the pan. Sprinkle with flaky sea salt if desired and serve warm.
    flaky sea salt
  • These are best served warm while the Brie is soft and melty.

Notes

Variations:
  • Swap pecans for chopped walnuts or pistachios.
  • Use fig jam or hot pepper jelly instead of cranberry sauce.
  • Substitute fresh thyme for rosemary.
  • Add a drizzle of hot honey after baking for a sweet-spicy twist.
Make Ahead:
Assemble the bites up to 24 hours in advance, cover, and refrigerate. Brush with egg wash just before baking.
